Lamb shanks- recipe anyone?

    I picked up the lamb shanks half price, on their sell-by date. Never cooked them before.

    I've got the standard fresh veg available, and a store cupboard of herbs/spices etc.

    Any ideas please ??
    I try not to get too stressed out on the forum. I won't argue, i'll just leave a thread if you don't like what I say. :)

    Great cookery advice from https://www.channel4.com/food.

    I just love Lamb Shanks, braised in red wine vinegar,garlic cloves of garlic, shallots, tin toms,rosemary,thyme, beef stock, salt & pepper, you can add anchovies if liked.
    Method can be found on above site it is a James Martin recipe.

    Hi easy,

    I do a recipe very similar to renegrade; lamb shanks, tinned tomatoes, onions, garlic, rosemary, black pepper and lamb stock. Pop it all into the slow cooker and leave for six to eight hours. You can add other veg (eg carrots etc) in too if you want.

    There's an earlier thread with lots of recipes for lamb shanks that should help so I've added your thread to it to keep the suggestions together.

    When I used to work at a restaurant the lamb shanks were amazing... I think they boiled them up in a big pot of water first, then they went in the oven in redcurrant gravy... Loved the days they made them as once they were all sold we would all cook up some chips and use them to wipe up the spare gravy from the pan :D

    I went late to my MrS tonight (well, late for us, it was about 6.30ish) and all the meat on the fresh counter was half price :money: :D

    I bought...

    Lamb neck fillets (small amount, just enough for me and DD2, DD1 doesn't like meat much)
    Pork Fillet - I am going to do gingered pork with this
    Lamb chops - the double ones from the Highlands :D
    Pork Shanks

    I also got sausages and bacon but I know what I will do with those.

    Biggest dilemmas are the pork shanks, double lamb chops (with a round bone in) and neck fillets.

    Any ideas folks as I haven't cooked these before :)

  • The lamb chops can be grilled - or panfried and the pan deglazed with a little red wine and redcurrant jelly. Neck fillet would make very posh hotpot or do it with tomatoes, cumin, coriander, dried fruit etc to make a tagine. Pork shanks I would also braise with onions, cider, wholegrain mustard etc
