The recipe is usually on the box of dried yeasts. From memory (I use fresh now) to make 4 loaves I use:
5lb 12oz Flour
8 teaspoons salt
4 teaspoons sugar
4 sachets of dried yeast
4 tablespoons of olive oil or 2 oz butter
let that mix then add 1450 ml water.
(I dont have a bread maker, this is using a dough hook on a mixer)
I let it mix for 10 mins then hand knead into shape and let it prove for 45 mins before baking in oven for about 20 mins.
The sugar gives a crisper crust I think, never tried it without, but might tomorrow! When I forgot the salt though, it did taste quite bland as I recall.

No, if you use strong bread flour, the gluten content in the flour is enough to feed the yeast.
I have the Cookworks breadmaker. My usual recipie is
500g strong white bread flour (from Lidl)
3g milk powder
9g salt
285ml cold water
12g fresh yeast
The above recipe is for when I use the timer so that we wake up to fresh bread.
If I was starting the machine straight away, I would use warn water instead of cold.0 -

Also - basic bread recipe in BM might offer some other suggestions. There was a thread discussing milk powder in the BM too so read and see what others think as well. Good luck with it!
