Had an AMAZING lemon cake today, this thing was a good 5 inches thick, with icing on top and lemon curd and buttercream in the middle. Very light and fluffy soft sponge - delish!

Got an email through, the phone recylcing place took NIMs phone, so that'll be £40 through soon to kick start the HUGE May £20 a day target.

£40 is brill! Keep meaning to look at which will pay me most for the phone I broke the screen on, cashback etc. Will pop it on the to-do list for tonight.

I'm thinking along the lines of lemon fairy cakes with butter icing on top and lemon zest ... ?

I'm glad I don't really like lemon cake (I'm a freak I know!) or I'd be running home to bake! And I really don't need to eat any more sweet things, I brought fresh Tescos chocolate cookies into work today to share out but I've got loads left over and I've got to finish them! Oh dear, my belly is not happy!

If you got a lemon, zested it, squeezed the juice into a bowl then just added say 3 teaspoons of juice into the cake batter and 1 to the icing, then put the zest on top it might come out pretty lemony! Oooh, I fancy baking now! I forgot to say, I got a book today, from a shelf that said 'free to good home' its from 1962 and it's like a little housewives book, with loads of lovely sounding cakes to make in it.

£40 is great! I got about £13 for my phones, 3 really old quite knackered ones so I was pleased!

Right, off to clean my room, it's raining and my cats have mudded up everything!

Thanks for that Cinny, I've got a recipe off the Independent website, but your sounds nicer! One of my favourite books is called Cooking, Knitting and Sewing for Girls that my mam must have got from a jumble sale or something when I was little, the clothes are all flares and there's even a golliwog to knit so that shows how old it is. I do love it though!

yoo hooo i have to share my fab news i got home to find an unexpected letter from the bank telling us that 1100 is coming our way because of misold ppi i cant believe it so that can clear the wedding sooner woooo hoooooo im so pleased !:P it could mean we clear 2 k next month and by june wedding paid for how flipping fantastic

Ooh great news Happy!!! We are still waiting for our reply from the bank about our misold ppi, they wrote to tell us they were looking into it.

That IS fab news Happy!! It's great you can pay for your wedding sooner:D I claimed back £1400 last month and it was stupidly easy - I think it just depends which bank it is Flower. Egg credited the money to my account less than a week after my first letter and I only discovered it by accident!

In money news this month I've just got a whopping £118 tax back - seriously though it's a bit of a lifesaver so I'm chuffed to bits. I might celebrate by doing some baking of my own. I don't really like lemon, but all this talk of lemon cake has made me want to try it!

How did NIM's interview go? I hope his farm wages get sorted too or he might be on the news ranting about that in his bobbly jumper!
