    Cupcakes
    100g plain flour
    20g cocoa
    140g caster sugar
    1 1/2 teaspspoons baking powder
    pinch salt
40g unsalted butter, room temp (so in this heat a puddle!)
    120ml milk
    1 egg
    1/2 tsp vanilla extract
    Frosting
    200g icing sugar
70g unsalted butter at room temp
    30g cocoa powder
    30ml milk

Makes about 9 cupcakes, so you need a muffin tin and muffin tin cases too!

    Preheat oven to 170C
Mix the flour, cocoa, sugar, baking powder, salt and butter until sandy (looks really dry and wierd, bear with it)
In a seperate bowl whisk the milk, egg and vanilla, pour half into the sandy mess and beat (I use an electric whisk set on high) to get rid of lumps
Gradually add the rest of the milk mixing slowly
Spoon into paper cases until 2/3 full then bake for 20-25 mins until a skewer or knife inserted into them comes out clean. Leave to cool in the tray for a few mins before turfing onto a wire rack to cool completely.
When nearly cool or completely cool make the frosting. Put the icing sugar, butter and cocoa in a bowl and mix well. Add the milk gradually, then mix with an electric whisk on high for 3-4mins to make it light and fluffy. Spoon over the cold cupcakes (not warm, it will curdle!) in a nice thick layer.
Decorate with sprinkles or silver balls, dusting of icing sugar, berries, icing writting pens etc, as desired.

They always say chefs are the laziest men in their own kitchens though! Plus chefs don't consider baking to be cooking, so you should be fine!

  • Wow, fantatic news about your 20p:T, i'm still kicking myself as I had loads after the bootsale and used them all on a lottery ticket and general shopping, was chuffed at the time to get rid of them in one hit with out having to go to the bank!

I take you you will send it special delivery, would be a pain for some naughty e bayer (I take it you sold it on ebay?) to say they hadn't received it - had a couple of 'non receivers' myself lately:mad:
