    Hi streetgirl74,

    Did you use block butter?

If you used soft spread marg or easy spread butter this might be the problem?

I recommend most biscuits are made with block butter, as it has no water in it which would affect the consistency of the dough.

Try the smartie cookie recipe, even my kids can make it!

    and keep trying!!
  • Yes i did use soft spread butter so will use block butter when we try again later, thanks for that :T

bumping an old thread to save starting a new one. ive tried posting on the christmas board, but didnt get very far - i hope you OSers can help!

i was hoping to make a biscuit inspired gifts for some relatives this year. i am torn between either a nice range of HM biscuits, or a gingerbread house. not sure gingerbread would be well received though, so i was thinking more along the line of shortbread, or perhaps an orange spice biscuit, to be in keeping with the season?

any ideas greatfully received as i need to have a trial run or two before i can give the gift

We found that the gingerbread house goes soft very quickly unless you wrap it up in something airtight. The kit was about £2 in Ikea last year - just for the gingerbread shapes.

My favourite one at the moment is for white choc and pistachio, white choc and chopped ginger works well too. 'Posh' enough for a present, not sure how well they keep though. Rarely more than ten mins in our house.....

1oz chopped white choc, 1 oz shelled unsalted pistachios, 3oz butter, 2oz sugar, few drops vanilla, 4oz self raising. Cream butter with sugar and vanilla, add flour, stir in choc n nuts, use fingers to form dough. Make it into 12 balls, greased tray 11 mins 150 degrees fan oven. Bigger balls make the supermarket sized cookies but you do need to flatten them a bit.

Nice soft american style cookies. All chocolate chips works well too, as do smarties.

    Queenie -

just did your every day biscuits, in a choco-nut version - very very very yum.. i can imagine them made with chocolate chips for a double chocolate version.. something occurs to me that if made larger, they would double for the ultra-expensive cookies that you can get in Tescos and Asda...

I made one lot - goodness, see what you mean about the soft when they're fresh out the oven part, LOL, i poked one with a finger! anyway left em for a few minutes, then put onto a wire tray - very very moreish, just bunged another batch in the oven...

it does occur to me that you could do a christmas variation by using lemon or rum essence, lemon/orange zest, and mixed spice... i'm certainly gonna try that one.. LOL...

now, if you'll excuse me, i'm going to raid the wire tray again, to finish off the cookies that were cooling down.. :D:D

    I use:
    100g butter
    150g to 175g caster sugar
2 unwaxed lemons (zest and juice)
Yolks of 6 eggs, whites of 4.
    50g plain flour
    500ml full cream milk
