Easy Homemade Biscuits

DH really likes these - and they aren't baked - you use the stovetop and then let them cool in the fridge. So no heating up the oven.
Unbaked Cookies
Bring to boil:
2 cups sugar
1/2 cup milk
1/2 cup cocoa (powder)
1/2 cup butter
Then remove from heat.
Add:
3 and 1/2 cups oatmeal (dry/not cooked)
1/2 cup peanut butter (smooth) - we use Skippys brand as it seems to work the best
Stir well. Drop by spoonful on greaseproof paper (on a cookie sheet) and place in fridge until set and cool.MSE mum of DS(7), and DS(4) (and 2 adult DCs as well!)DFW Long haul supporters No 210:snow_grin Christmas 2013 is coming soon!!! :xmastree:0 -

My best one has to be shortbread - 8oz very soft butter, 8oz plain flour, 4oz cornflour and 4oz icing sugar. Rub in until it all comes together and press into a big lump. Roll out to desired thickness, cut out into rounds and bake in Gas 3 oven until tinged with golden brown. You can include cocoa powder to make chocolate flavour. When they're cool, you can dip half of each biscuit in melted chocolate. You can put icing on them. You can stick sweets on them. Brilliant stuff.0

Hiya - not posted a reciepe before and I am not so good with the quantities as I make it so regularly I tend to just chuck it all in!
3 x milk choc large bars ( I always use, basics or tesco value)
3/4 pack digestives (again always basics or value)
pack of marshmallows
heat the choc ( i do it in a microwave but be careful not to over melt)
bash all the digestives to crumbs with a rolling pin - does not matter if there are a few large bits in
cut or break the marshmallows up into small pieces
mix it all together and spread out on baking tray about 1cm thick
pop in fridge for about an hour till hard
slice up and eat!
I also sometimes put value rice crispies in which makes a nice change and add a few smarties too.
At xmas I made trays and trays of this for gifts and once I had spread the mixture to set I popped some mini marshmallows on the top or smarties. When cool I cut them up and popped them on a gold paper plate, wrapped some of that florist cellaphane around it and added a bow - it looked great and people loved it!0 -
