  • Its more of a comfort food but cook and cube burgers, mix with rice and mixed veg. Optional add ketchup or other sauce.

Cauliflower makes an excellent potato substitute. You can take most potato recipes and use cauliflower instead. It's a staple of low-carb dieting.

This might work and it looks pretty tasty.

    CHEESY HAMBURGER & BROCCOLI CASSEROLE
    1 pound ground beef
    1/4 cup onion, chopped, 1 1/4 ounces
    4 ounce can mushrooms, drained
    16 ounces frozen broccoli
    Salt and pepper, to taste
    Sauce:
8 ounces sharp cheddar cheese, shredded
    1/2 cup heavy cream
    1/2 cup mayonnaise
Brown the ground beef, onion and mushrooms in a medium skillet. Season with salt and pepper. Drain the fat. Meanwhile, put the frozen broccoli in a 2 1/2-3 quart casserole with a lid. Add 2 tablespoons water, cover and microwave on HIGH about 6-8 minutes, stirring every couple minutes until tender crisp. Drain the broccoli; stir in ground beef mixture. In a 4-cup glass measure place all of the sauce ingredients, microwave on HIGH about 2 1/2 minutes, or until melted and smooth, stirring every minute. Add to the broccoli mixture and mix well; adjust the seasoning to taste. Bake at 350º 20 minutes until hot and bubbly.
    Makes 4-6 servings

I don't know quite how they got there, but I have 40 beefburgers in my freezer.:o We have no money to buy any extras today but in my fridge right now I have broccoli, a cauli, an onion, iceburg lettuce. We have frozen pittas and sliced white bread. We have no potatoes, but all other store cupboard staples.

Any suggestions of what I can start using these burgers for other than in sliced white bread please?

organise a party for the weekend. Tell everyone you'll supply the burgers and ask them to bring buns/salad/pasta/drink. Enjoy!

Make a tomato-y sauce and cook the burgers in it, like a casserole. This used to be called "Vienna steaks" in the Uni canteen.

Don't do as my FIL once did when MIL was ill and he was cooking tea for DH. When asked what was in the mixed grill DH replied "you know - burgers and that" - and came home to an entire packet cooked and on a plate!

Thanks everyone for the replies. We have got through about half of them. I am thinking about doing a mixed grill for 2 with the rest;)

I have four extra beef burgers defrosted in the fridge, any ideas what I can do with them?
They are pretty thick ones, so I'd rather not throw the away. I know I can cook them and freeze again, but I'd like to do something more exciting if anyone has any ideas?

Can the burger meat be used like sausage meat? Ie, scotch eggs or stuffing or is the taste going to be too far out for this kind of thing?

    What would you do?
