belfastgal- The stuffed peppers I make with dried soya mince but you could use quorn as its easier. I just fry onions in frylight, add peppers, mushrooms, sweetcorn- whatever other bits of veg I need to use up, put in garlic and mince, then tinned toms, add some bouillion or other flavours, then scoop into the peppers that are cut in half, put a drop of water in the bottom of the dish and cover with foil, cook for approx 30 mins on high.(sometimes I take the foil off half way through so they crisp up a bit if they look a bit soggy, if you have HE cheese on them put it on now so it can melt in,) then serve with brown rice HTH.
Stir fry is great too as you can do it with frylight and water rather than oil, and is really quick to make for when you are starving.
Shepherds/ cottage pie, spaghetti bolognaise, casserole, stew, soups, veg with quorn sausages, curry, are all easy to make syn free.
macca1978- I love tofu! I only really like the smoked one or the silken tofu which comes in cartons. My fave things to do with the blocks of it are: grill it in strips and have it in a sandwich,
crumble the block into some mashed potato, make into 'cakes' then cover in breadcrumbs (i just toast my 2 slices of brown bread for HEB and crumble them.) and fry in frylight or HEB olive oil to make a kind of 'fish' cake! Yummy!
Cut into cubes and fry and add to stirfry or curry.

Tips for it are to grill or fry it so it isn't too squidgy, and marinade it before using it if using plain tofu.
The silken tofu is great for sauces, and for cheese cakes (google vegan recipes and loads of them come up using silken tofu) This is the stuff in cartons and is very versatile. I use it as an egg replacement and make a 'scrambled egg' style thingy which is yummy, but if you eat eggs then prob of no interest as you can have the real deal!
first78- I don't go to a class, but I have been to SW before years ago. I find it fine doing it on my own, but I am very determined once I set my mind to something, and ultimately if I cheat then I am the only one who loses out, I am so ready to lose the weight so I have really set my mind to it. Should I hit a stumbling block I fully intend to sign up to a class to help me out should the need arise. I find this thread really helpful to know there are others in the same boat as me.0 -

3 eating apples
2 tablespoons lemon juice
finely zested rind of 1 lemon
3 large eggs, separated
57g/2oz caster sugar
113g/4oz self raising flour
2 teaspoons ground cinnamon
2 level tablespoons reduced sugar apricot jam

1. Preheat the oven to 180°C/Gas 4. Grease and line a 7in/18cm round spring-form cake tin. Halve the apples, remove the cores and slice thinly. Place in a bowl along with the lemon juice and rind and toss together. Set aside.
2. Whisk the egg whites until stiff. Add the sugar and egg yolks and whisk until thick and creamy. Sieve in the flour and cinnamon and gently fold in using a large metal spoon taking care to retian as much air as possible.
3. Spoon half of the cake mixture into the tin and gently press in half of the apple slices, add the remaining mixture and then the remaining apple, arranging a few slices on the top.
4. Bake for 45-50 minutes until golden brown, risen and firm - or until a skewer inserted into the centre comes out clean. Cool, then release and place on a serving plate.
5. Mash down the apricot jam using a fork, brush over the top of the cake, cut into 8 portions and serve.
