My fav recipe at the mo is spinach & ricotta pasta from the lastest magazine...or maybe the 1 before that... for those who didnt see it!
serves 4 (but 85g of ricotta is 1 HE b if you want it for 1)
1 onion
2 cloves of garlic
400g spinach
fry light
half tsp nutmeg
340g ricotta cheese
142ml bovril chicken stock
salt & pepper
freshly cooked pasta
peel & chop the onion, peel & crush the garlic, wash & chop the spinach
spray a large non stick saucepan with fry light and add the onion, garlic & spinach. Stir fry for 8-10 mins or until the spinach has wilted.
add the nutmeg, ricotta & stock. Cook for a further 4-5 minutes, stirring often. Remove from the heat, season well & stir into the cooked pasta.

I had a 1/2lb gain this week, i strayed from the plan a tiny bit at the weekend!! won't be doing that again though, even though it was only a 1/2lb gain it was not a nicw feeling that i had gained! Anyway i made this for todays tea, really simple to make Beef casserole:
lean braising steak
carrots
onion
mushrooms
bovril to make stock
mixed herbs
dry fry beef, put in casserole dish, add chopped onions, mushrooms & carrots & mixed herbs ,make up bovril & add to casserole dish cover & cook in oven on about 170 until cooked, think mine was in for about 1 hour or so! you could also put this in a slow cooker.
Red day today so i have new potatoes HEB & broccoli & cauliflower.0 -
Hi
Had my first weigh in this morning and I lost 2lb. Only really started properly on Monday so pleased with that. Have menu planned for most of next week and just need to do a shopping list and then stick to the menus.
Congratulations to Rabbits, Prophecy and naturally for your losses and for all those others who stayed the same. Good luck for all those who gained - blips along the way
Can't think of any favourite recipies but as I try new ones out I will post up any I think are worth others trying and may enjoy.
Good luck for next week everyone.0 -

Ironically, this is one of the very few SW recipes that I hated! I chucked the whole lot in the bin . I'm addicted to the meatballs recipes in one of the old 50 Best Recipe books (the one that has pasta ratatouille).Love MSE, Las Vegas and chocolate!0 -
I think the two lasagne recipes mentioned recently look lovely and can't wait to try them out.
Today I will be mostly slow cooking the following:
Spicy beef & beany chilli (naturally's own creation)
Pack of diced stewing steak
tin of beans
tin of tomatoes
Misc vegetables: think I've some onion, carrots and potatoes that will go in
Chilli powder
tin of Kidney beans
Mixed herbs (which I buy by the bucketload and go in EVERYTHING!)
am going to fry off the beef and the onions and stick everything in the slow cooker over night. Hopefully a few nice dinners will emerge out of it!0 -
Oh and today's meal plan, which MUST remain very low syn. I'm going EE.
b) hifi bar (b)
L1) cous cous and tuna mayo, but chucked half of it away as asda smartprice tuna had really gross bits of what looked like grated fat in it  (1/2 syn for mayo eaten)
L2) Pasta & sauce, asda smart price one (3) and cheese (a)
Think dinner will be a vegetable stir fry, to try to feel a bit virtuous, and late night snack of supernoodles and baked beans, which I have got a bit addicted to recently
I am EXHAUSTED today. Not sure if its the work or food I've been eating recently. I also have massive choccy cravings0
