  • mazzers/mercy - I tried making the coconut muffins a while ago (in a smoothie maker & without splenda :o ) so wasn't a great success. Have now bought the splenda, but still no blender (I'm a poet, & I know it!!) so am wondering if I can whisk the ingredients together instead (using electric whisk)?? I'm worried the heavy cream (double??) will go too thick & therefore the muffins won't work again. Any thoughts peeps??

    STALLS -- WHY THE SCALES CAN LIE

    A biologist at Berkeley shared something very revealing on the low-carb BBS system about 4 years ago that helps us all through the erratic weight fluctuations you invariably encounter:
    Fat cells are resilient, stubborn little creatures that do not want to give up their actual cell volume.
    Over a period of weeks, maybe months of "proper dieting", each of your fat cells may have actually lost a good percentage of the actual fat contained in those cells. But the fat cells themselves, stubborn little guys, replace that lost fat with water to retain their size.
    That is, instead of shrinking to match the reduced amount of fat in the cell, they stay the same size! Result - you weigh the same, look the same, maybe even gained some scale weight, even though you have actually lost some serious fat.
    The good news is that this water replacement is temporary. It's a defensive measure to keep your body from changing too rapidly.
    It allows the fat cell to counter the rapid change in cell composition, allowing for a slow, gradual reduction in cell size. The problem is, most people are frustrated with their apparent lack of success, assume they have lost nothing, and stop dieting.

    However, if you give those fat cells some time, like 4-6 months, and ignore the scale weight fluctuations, your real weight/shape will slowly begin to show. The moral of the story - be patient! Your body is changing even if the number on the scale isn't.
  • alias, when/if I'm being good & just eating low-carb then my posted menu is pretty much all I do eat. I may have some peanuts in the evening but that's it. Maybe my meal portion sizes are big?? :o

    Am seriously thinking about ditching the scales - one last weigh-in tomorrow (just because re-starting low-carb & [STRIKE]need[/STRIKE] want to know my starting weight) & then stick them in the garage for a while & concentrate on how I feel/how clothes feel.

    I often think the 3 meals a day menus seem very little. :confused:

    I dont seem to get hungry this time around but i know what you mean, some peeps seem to eat very little, as long as its lc, i think its ok to eat when you want, i did last time i did atkins, as i had a partner and he was always hungry but i did lose loads.

    I think maybe i'm not eating enough.

    Sweet i made my muffins in a smoothie maker, but am addding more splenda this time.

    That theory about fat cells has to be true, cos i have gone from a size 20 top to almost a 16 but the scales dont seem to verify that much loss, and my 16 trousers are soo loose on me. so something weird is going on.

    In my case yeah, that's it... if you go back a few weeks, you'll notice I was nipping out and buying extra bits and pieces as well but I've made a conscious effort lately to just eat what I plan to. I'm usually stuck in the office all day, so there's no "passing" low-carb food to pick on! Things like the olives and spicy seeds are grazed on all afternoon.

    The only things I don't list are drinks - always green tea or soya milk, maybe the odd herbal tea...

    Hi guys!

    Just a little clock in

    I've favourited (?) page several ago, will catch up when back from asda. Need eggs for brekkie (and general life) next week

    Got lots of sun today, I have a window from 12-2 where my back yard gets sun in the only place I can set up a sunbed. I'm in a very built up area which is good cos I don't then get too much. Could easily do hours of the stuff. Did 15 min (timed) intervals each side for hour n half. First hour without sunblock as wanted to maximise vit D, but then put it on decolette, face and tummy as tummy aint seen rays since july on hols :)

    Haven't burned. Put this down to vit D supplements. Used no sunblock in Switz recently and didn't burn then either :j I normally would have done. Imagine my glee!

    Anyway, asda is calling, again :)

    I'm lucky that my garden is a sun trap from dawn 'til dusk... though gotta say, not so great right now shining off the puddles of sewage :eek: I wouldn't mind so much but there's nowhere to sit; every bit of patio and bench is covered in dried sh!7 _pale_
