Thanks for the tip Mercy - might give it a miss then. I wanted it to try and make my own tortillas for having chicken fajitas so I don't think the coconut flour would do assuming it tastes of coconut? Has anyone had any success making low carb meringue? I fancy pavlova but i seem to remember someone saying that splenda doesn't work.

I may have been too harsh as I have no experience of my own with soya flour. Try here

dr Bernsteins site has a recipe section and I'm sure searching or posting a question on there would give you lots of info. You have to join to see recipes but it's all free.
They reckon that you need lots of eggs for coconut flour to work as it has no gluten. Might be different with soya. The guys on there seem v nice and helpful. If soya flour is good for anything they'll know

Hi, i made mini pavlovas with sweetener but they weren't sweet and crispy as i expected, they looked good but were just puffs of air, so i wont be making them again.
The stewed strawberries were fab tho. was really jam like. I stewed them with a little water and sweetener until they went thick and mushy.0 -

found this but can't vouch for it. If anyone uses it let me know and I'll add it to the list
MERINGUE TOPPING
4 large egg whites, at room temperature
1/2 teaspoon cream of tartar
3 tablespoons granular sugar substitute
1 teaspoon vanilla extract
For the meringue: In a large mixing bowl, with an electric mixer on medium, beat egg whites until frothy. Add cream of tartar. Increase speed to medium-high and beat just until egg whites form stiff peaks, about 2 minutes. Beat in sugar substitute, 1 tablespoon at a time, scraping down sides of bowl once or twice. Add vanilla. Beat until thick, about 30 to 45 seconds.
Bake until meringue is golden brown, 15 to 18 minutes. Cool on wire rack.

I made the coconut muffins with a mix of almond and soya flour (to use it up) last night. The result was rather nice, although the soya flour gave a weird texture and a hint of aftertaste but only when the muffins were warm. Even OH liked them.
Will try to make something else with the soya as I bought two bags of the stuff coz my Tesco was stopping selling it. I'll keep you posted.

If you highlight soy and see what Stephan has to say about it you may change your mind
Mercola doesn't like Soy either.
