Hi Sweet
Before I fell off the low carb wagon I often had 'congestion' issues too. It hasn't happened this time & the only change to my diet has been more spinach.
My breakfast is usually an omelette & last time I would have cheese & mushroom as often as not. This time I'm having spinach & mushroom instead, sometimes with a little grated cheese as well.
All I do is chop the mushrooms & fry in butter then when they're done add some chopped baby spinach to the pan until it wilts. Put the mixture on a plate whilst I make the omelette. When it's just about cooked I fill it with the spinach & mushroom mixture (add a little cheese if I fancy it) fold it & heat it through.
It's really tasty, I love the fact that I'm getting a head start on my 5 a day :A & it keeps me full 'til lunchtime.
I only recently started eating spinach too, i love it and always keep a packet in the freezer as it defrosts quickly and is quite good, its frozen into convenient little bundles and i ususally have three of those as its so lush, i fry it in butter and swirl double cream into it and have with some fish or chicken
Edited to add that fresh is much nicer, but frozen is a good stand by.0 -

That's not the recipe I was looking at yesterday - are they oopsies that you have made?? I don't know the oopsie recipe as I've never made them but I think they are oven cooked rather than microwave cooked??
The one I was looking at was a quick microwave cooked flax bread/cake recipe that Shykins or Sazbo posted many a moon ago. You cook it in the container you mix it in. Only small (about 4 slices worth) but you can increase the amount of ingredients for a bigger version & just adapt the cooking time.0 -

Meals for today
B - 3 chipolata sausages & fried egg :rolleyes:
L - 2 bran crisp breads with butter & cheese, garlic sausage, cheese pod & maybe another Activia yoghurt to keep me going
D - chilli & cauli mash (leftover from Friday & have another portion in the freezer)
Tis a lovely sunny day here so we are going to Durham, just going to make my crackers up & take my lunch with me for a picnic, should be good.

I've decided to give low carb a go again as it's worked for me before. I've just got to stick to it. Really difficult sometimes.
But I like all the recipes on here and meal plans, so thanks for the inspiration.0 -

yesterday I posted that it really gets things moving but today I have had to stay within 5 meters of a bathroom!!!!
I feel like absolute carp and unfortunately have fell off the wagon (only for today) and had some cheese and crackers, a couple of choc chip cookies and am just about to have a hot chocolate! it could have been worse though as across the road is a chippy and about 2 minutes away is mcdonalds - thankfully the thought of most foods is making me feel ill and I cant be asked to get dressed (been in pj's all day!)
tomorrow is another day and I plan to be back on that wagon (minus flaxbread)0 -
Oh dear, newcook hope you are feeling better soon, obviously need to be careful, portion-wise, with flax bread!! :eek:
I'm still loving my bran crispbreads although I do have ominous rumblings in my belly after eating them!! Might be the Activia yoghurt though because I had one of them again today as well?? Whatever, something is happening although I'm still not fully de-congested yet!!:rotfl:
My big exciting news today (& nothing to do with low-carb) is that I saw at least one kingfisher in Durham today!! :j We were just walking along the river towards the Cathedral & I spotted a flash of blue skimming across the water!! We stopped & had a look & had fantastic views of this gorgeous kingfisher whizzing up & down!! Saw it, or another one, further along the river another 4 times!!:D:D Truly amazing!! I'm a bit of a bird nerd & it's the first kingfisher I've ever seen so I was sooooo excited!!
Durham was beautiful, as always, very busy though, but a lovely day out.
Anyway, I'm feeling so tired & it's not even 10pm!! Oh dear, sounds like I'm turning into mazzers!! Having an early night so see you all tomorrow.0 -

Just did the wii fit bodytest & it told me I'd put 1lb on since Friday!!I've been so flipping good as well!! :mad: !!!!!!. Won't sway me & I'll continue as I was before though.
Btw, had another carp night sleep last night, wish I could just sleep soundly
B - warm boiled eggs with either mayo or butter (bubbling away in the pan as I type)
L - bran crispbreads with butter & cheese, cheese pod & anything else I can find
D - chicken something with cheesy leeks & probably cauli mash :rolleyes:
Out & about today so will see you all later.
