Sweet - thanks for the info about the swede, for some reason i thought it was ok, i`ve not made the pie yet but will use less swede and mix it with cauliflower when i do.
Well i`ve had a cheat day - well not all of it, i had sausages for brekkie x 2 and another sausage for lunch. Tea has been chilli made with beans and minceand the biggest jacket potato that i have ever seen
i was hoping that eating some carbs would stop the acid that i`ve had on and off for the last few days and whilst it did seem to ease it i can feel it again now.
Does anyone else suffer with acid? Its making me feel bloated and i`ve beep burping a lotthe worst part is that i can feel it in my throat and all the way down to the old tum. I`ve never had it before and its driving me mad as well as stopping me from sleeping properly.
Bah, i shall carry on cheating today and get back on track tomorrow!
I have a lc curry in the fridge for tomorrow night and Dh has just left for the shops to pick up some antacids and some icecream, i`m also gonna have a nice glass or two of brandy tonight. If the acid won`t go i`m gonna enjoy myself
Feel a bit like a kid throwing the dummy out tonight - hopefully if i manage to get a bit more sleep tonight i shall feel human and raring to go in the morning. On the plus side i`m actually looking forward to lcing again tomorrow after the big cheat - just need the acid to go.

Couldn't do cutings of the geranium as all ends had flower buds on. Feel it should get it's last chance to flower. Might even bring it in for that. It's a bit big but I'm sure we'll cope :rotfl:
So had too much spare time. I made a recipe I've had around for a bit.
Very nice but very moreish
Coconut slices
Makes 18
Base
50g butter
50g cream cheese
150g ground almonds
pinch salt
½ teasp vanilla extract
½ teaspoon baking powder
1.5 tablsp splenda
1 large egg
100 – 150g sugar free jam
Topping
180g dessicated (unsweetened) coconut
2 large eggs
1 tablsp splenda
Cream butter, cream cheese and splenda together. Add egg and vanilla and beat until smooth.
Stir in baking powder, salt and almonds.
Spread the mix into a buttered 11x7 tin or similar. A wet spoon helps this. Spread the jam on top, mix first to reduce gelled state and improve spreading.
For topping, beat eggs then add coconut and splenda, mix. Then spread over the jam. Press this down firmly once spread over, it stops it being too crumbly once baked. Using a wet knife, cut into 18 slices. Dip the knife in water to make this easier.
Bake for about 30 mins at 160’C, until browned. Re-do the cuts and allow to cool a bit before transferring to a wire rack.
Around 1.5g carbs per piece, depending on which and how much jam you use.
I've just had 3 pieces and now feel quite full. I reckon it'l keep for about 5 days or so, well it can try
Funny thing happened. Went to spoon out splenda but it's that long since I used it it had all set in 1 clump! Had to use the pestle and mortar! So I put in a little less than the recipe asks for as my splenda was a bit more concentrated :rotfl:
Coconut slices taste great, and as I mentioned they're v filling.
Will likely take a piece for mid morn snack next week at work.

Sunny, i suffer with severe acid heartburn, have done for years due to the high carb diet, cant even lean forward or it's really bad burning, i have got by with ranitidene tabs (cheaper than tagamet) dont get it at all with lc, completely gone, it was such a revelation. It returns though when i cheat0

well, pet, when we went to the doc recently to find OH was diabetic, I came home and read up on treatments & diets. This LC one looked by far the best for diabetes - I found a Dr. Bernstein website & book and that felt right to me. But we had a lot of probs since OH went on it. I'm on the same diet, I'm not diabetic & dont have heart disease, and I'm fine.
So its like this diet isn't right for him, or conflicts with something else that he's doing or taking... If it's for yourself, you don't mind takign chances and trying things out, but if its your family then you agonise over what to do for the best eh ! I will have a think over the weekend and see how he goes, he is sound asleep now- UNHEARD of during the day !

Low-carb isn't right for everyone, and maybe your OH is one of those people who just can't tolerate it as a WOE.
I know what you mean about family, I'm responsible for doing my Dad's shopping (he's diabetic & has heart probs too) & it's quite stressful making sure he eats properly, especially when all he wants to eat is bread, cakes & chocolate!! :rolleyes: I do know that being constipated can be dangerous for him though, to do with straining, so he takes what he calls 'mega blasters' at times of need!! Can't remember what they are really called, but they were prescribed by his Dr. & I can find out for you if you don't get anywhere with other remedies.0 -
Sunny, if you want mashed swede on your cottage pie then have it!! Can't find my veggie carb counter atm but I really don't think it makes a huge difference carb-wise. Like I said, I used to have it instead of pasta or rice with bolognaise & I loved it - mashed with butter & loads of black pepper - yum yum!!
Hope you get your heartburn sorted, I suffer with it now & again, but not for ages. I seem to remember someone on this thread used to take spoonfuls of double cream to help. Sounds like a good idea to me!!0 -
Mercy, love the sound of those coconut slices. Can't stand jam *spit spit* but I'm thinking I could use stewed brambles instead, still have some in the freezer.0

Lol, but nooooooo I disagree!! Jam is solid & jelly-like, ugh feel sick just thinking about it _pale_ I would just stew my brambles in a bit of water, no splenda or anything, just to make them soft & mushy-like0 -

thank for that sweet :Ddont worry i will definitely being coming back, can hardly stay away from here. i miss this way of eating!!strange when im low carbing i miss carbs and then when im eating carby i miss low carb. its like when you know you cant have something it turns into the thing you really want :mad: feeling so much better though now. so gonna enjoy the rest of my weekend and begin a fresh start on monday :jwooo cant wait!!

Morning - slept late for once, it's such a treat!
Just about to have my coconut oil in a little little cup of coffee - still can't stand the taste/texture but love the effect so have to wait for the optimum moment when the oil has melted and the coffee has cooled so I can swallow in a oner.
Breakfast is another egg, bacon and sausage muffin and have avoided the wetness by defrosting it on some kitchen paper, it looks and feels much more inviting. Now that that problem is solved I'll make more for the coming week.
Need to go out for a walk today, been stuck inside too much doing work so it's time to force myself into the great outdoors.
I was reading about a TV presenter (Jay Hunt I believe) who has lost 5 stone with a gastric bypass which is a permanent piece of surgery. Her long term dietary advice, for after the first month, was low sugar and low carbs!For me he advises thenon-reversible bypass, because among other things I have a sweet tooth. Unlike the gastric band (which can be reversed) the bypass makes most people feel sick if they eat sugar or too many carbs, as the body can no longer tolerate them.
