    Its quiet on here lately.

    Had a good lc day, my brazil nuts kept me going for hours, had chicken and spinach when i got in at 3pm, and just had an omelette.
    I've been thinking of all the things i fancy, and that i can have them on Sunday icon7.gif
    Will have a shopping splurge after work on Saturday, can't wait, something to look forward to icon7.gif

    Weather has cleared up at last.

    My insurers have agreed to cough up as i phoned them with a huge list of calls i've made and not had return calls, gave names, times, duration i was on hold etc, and it's worked.

    Work is improving, and i am no longer a nervous wreck, i think i've been relying on my colleague too much, and am managing fine on my own icon14.gif
    Things are really sinking in at last.

    Am off to watch a film.

    Many thanks for this site -I spent hours last night reading it and I'm not diabetic! Sent it onto loads of friends, both diabetic and non- diabetic, cos it all made massive sense and was extremely interesting.

    I'm sure that by eating a modicum of berries and commerical food like Hellman's mayo and so on that I'm getting traces of sugar. It's always the extreme end of the 'market'(that's not's meerket which gets the horrible press.

    Off now for my working away stint and fortified for my trip this morning with mashed egg and mayo (left over from yesterday) and a small bowl of that lovely Lidl yoghurt (with flaxseed oil stirred in) and 10 strawberries.

    Hope everyone is managing OK.

    Morning all,

    im kind of struggling at the moment, i feel like im eating the same things over and over, not even sure what i used to eat to be honest. does anyone else struggle to add variety into their meals. I think im becoming way too obsessed about what i should eat and will eat. not good. i always get that way when im actually being good on a diet though.

    Yup, i'm eating the same things over and over too.
    Not good, cos i'll soon get fed up.

    I'm gonna make more effort to cook re-heatable meals for after work.
    The butter chicken (curry) is lush, and really easy.
    Mind you, the bread recipe i posted is great too, good for toast or a sandwich and freezes well.
    A cooked breakfast followed by toast and low sugar jam (one tsp does me) will keep you going all day.

    Was thinking of bolognaise on shredded courgette for later, covered in fresh parmesan. yum

    I get into periods where im really keen to cook and then other times where i just want to eat something that i can make quickly without any hassel. I think i might start batching cooking things which i can then leave in the freezer for when i want something without a fuss :) last night i got my bf to make me a moussaka :) tasted so good. Its like a lasage but made with auberinge instead of pasta sheets. I think this is something i could make and freeze. Ive also tried making a fish pie in the past with mashed cauliflower on top instead of potato and grated cheese on this. was lovely. All the nice food take time to make im just so lazy is my problem.

    Me too these days (on both counts)

    I didnt get to cook as my phone has been non stop.
    Just had bacon, egg and mushrooms, will have something when i get in from work at 8pm.
    Will cook tomorrow on my day off icon7.gif

    You can and will get obsessed about what you're eating, the idea of having a variety of meals but without putting the effort in is self defeating. If you want variety, you must make it so. It is not going to drop on you easily in the way the bread does :)

    I stopped posting my meals for a time because I was paying too much attention to food. Now I don't post em cos they really are very similar - but I no longer care about that :rotfl:

    You must make the effort if it's what'll stop you straying. No need to be bored, but it takes effort. Is your boredom a secret part of you defeating yourself? Don't let it win!

    Batch cooking is a good idea. In winter I find it easier with rich thick soups and broths :)

    I do kinda batch cook when I do my lunches for work.

    1 - I make a geat big 5 egg omlette filled with chillis, tomato, pepper, spring onion, cheese, hot dog sausies (or other chopped cold meat), mushies and anything else in the fridge. I mix it in a measuring jug till it's quite solid with stuff. Then cook in 3 parts butter, 1 part olive oil (stops the butter burning) Cook part on ring, part under grill. When set,cut with a spatula. Then dry off under a recently switched off grill. After an hour or so is sorted to put into 2 lunch packs and chill in fridge. I eat this partly at brew time and with salad leaves for lunch - rocket, spinach and watercress is good :)

    2 - chop up 3 hot dog sausies for each, mix nice cheese and mayonaisse, place these at opposite ends of a lunch box and seperate with mini toms. Again eaten with a nice salad.

    3 - sardines or peppered mackerel on top of a nice finely chopped salad. This can be easily arranged by taking the salad in a snack box and adding the fish at the time.

    I do 2 lunches at a time and therefore get a night off organising lunches one in two :)

    If you like the coconut muffins, they really are easy. Mush ingredients together in a jug then pour into muffin tin, then cook. So easy, it's almost a shame not to :) You feel like you've had a great spongy / muffin deal (especially with double cream on top) and yet they're lower in carbs than any 'regular' cake. Takes 5 mins to organise. 2-3 days to demolish in such a tasty way. :)

    Bakewell Tart will take you a little longer. Once you've made it you have the most delicious 6 pieces of cake - again without serious carb intake.

    Mockolate danish - not really a danish but sooo rich and delicious! only 3 mins making, short time in micro, sudden delish dessert! I've just had that for tea when I didn't know what to do. With a little double cream you feel so naughty! But you aren't!

    Treat yourself, and be happy.

    What I am eating this week

    Tuesday
    B - boiled egg and mature cheddar
    L - omlette as above plus salad
    D - fish and peas


    Weds
    B - boiled egg and mature cheddar
    L - omlette as above plus salad
    D - Shell fish followed by greek yogurt and pecans

    Thurs
    B - Boiled egg and mature cheese
    L - sausage and cheese/mayo and salad
    D - fish and peas

    Friday
    B - boiled egg and nice cheese
    L - sausage and cheese/mayo and salad
    D - shellfish followed by Greek yogurt and pecans

    If I was at work another day it'd be same breakfast, sardines in tomato with salad and Well that'd be a steak I reckon!

    This may well change next week. The egg and cheese will be the same - tatses great, keeps me going. The fish and peas thing is something I love and can't seem to get enough of. Not strictly low carb but eating this regularly hasn't affected my weight loss, in fact, I'm losing for the first time in ages.

    The greek yogurt (I know many like this) is ace with nuts. It keeps my fat content up (with 50g nuts in it) and tastes like a dream. Don't know if I will get bored with this anytime soon.

    I don't get hung up on repetitiveness anymore, I know what I like and I have to say I enjoy every meal. I do change things now and then. Thinking of hotdogs chopped up with cheese and beans for a nice hot lunch :rotfl:
