My parents went to Madeira last year and loved it so they bought a timeshare there. Asked if we fancied coming along.... Thought what the hell, sounds good to me:D

Just came across this.
LOW CARB CHOCOLATE BROWNIES
Low Carb Brownies
Makes about 48
1 cup ground almonds, well sifted (most supermarkets do ground almonds)
1/2 teaspoon baking powder
1/2 teaspoon salt
1-3/4 cups Splenda or granulated Maltitol etc
1 cup unsalted butter
4 ounces unsweetened baking chocolate (or good quality dark choc), chopped
2 teaspoons vanilla essence
4 extra large eggs, beaten
1 cup chopped pecans
Preheat oven to 350 F. Butter a 9" x 13" cake pan. Stir together almonds, baking powder, salt and Splenda; set aside. In a microwave bowl, on high, melt the butter and the chocolate, stirring frequently. Add the Splenda, the beaten eggs and vanilla; beat until well blended. Stir in the dry mixture, mix well, then stir in the pecans. Pour into the prepared pan, spread evenly. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Check at 15 minutes. Do not overbake. Cool on wire rack, cut into 48 squares.
Note: 1.8 net carbs per square
Also this conversion for us Brits
1 cup unsalted butter is around 8oz/227g
1 cup pecans is around 3.5oz/100g
1 cup almonds 8oz/227g
1 cup splenda ~1oz/25g0 -
Oh, G&B, you will have a lovely time, Madeira is supposed to be beautiful so I'm not surprised your parents fell in love with it.
We haven't been abroad for about 6 or 7 years?? Hubby & kids are desperate to go somewhere but we have always had other things to pay for (disastrous house moves etc :rolleyes:) so money has been tight. I'm quite happy holidaying/camping in the UK, especially Scotland, but I do feel bad for hubby/kids not getting what they want/need.
No holiday this year as supposed to be getting major work done to house, eek, but hopefully next year!!0 -

Mazzers - Thanks for the heads up on lowcarbmegastore. I ordered yesterday and although paid for the cheapest 3-5 day delivery, my order arrived this morning. I usually make flax microwave bread if I need for a sausage sandwich or something but bought the gluten so will search ffor your bread recipe and give that a go. I got erythritol, very expensive but seems like a much better sweetner than splenda etc. and I already use Stevia. I got 3 flavours of syrup hazelnut, strawberry and butterscotch.
I made these yesterday and although they're small, they are very filling.
Cinnamon Banana Muffins & Frosting
3 eggs (well beaten)
1/4 cup oil (I used coconut)
4 TBSP water
1 TBSP vanilla ( I read that wrong and used 1 tsp, seemd OK)
1 tsp banana flavouring
1 cup ground flax
1/2 tsp baking powder
1/2 tsp bicarb
1 TBSP cinnamon (the amount is correct)
I used about 10 drops stevia to sweeten
Beat eggs,
add oil, water, vanilla.
Mix all dry ingredients, then incorporate to wet.
Stand for 5 mins
spoon into 12 greasd muffin tins(no liners)
bake at 180 for 10-15 mins
place on cooling rack immediately
store in fridge
Frosting
this was eyesight measuring
about half a tub of cream cheese
1 tsp vanilla
4 TBSP splenda
mix all together spread or sandwich muffins enjoy...There is nothing either good or bad but thinking makes it so.0 -
