I find pesto quite an over-powering flavour so I don't have it too often. I always end up chucking most of the jar away when it gets mouldy but it seems to last longer than 3 days in the fridge if you top it up with olive oil to seal it.
Any idea whether or not you can freeze pesto? It seems such a waste.0 -

I know what you mean daisy, my crumble did brown but it was still quite soft, perfectly edible though!! Don't know if it will 'harden' overnight as I'm putting the other half in the fridge tonight.

zero, I used less than a quarter of a jar of pesto the other day & made chicken pesto for 4 people. That was enough though as I find it quite a strong flavour as well.
Will use some more tomorrow but hope I don't have to throw the rest out, what a waste!! I hate waste!!0 -

mazzers - your bread sounds lovely, will have to check it out. Although I'm not a lover of bread I think my antipathy stems from what wheat does to me. Would be good to have something tasty to toast.

Treen - I'm not with it today but if you search this thread ketogenic cocktail will come up. I use coconut oil, linseed oil and omega 3 caps. Can't give you measures as I do it by eye. Seems to work to get me into ketosis, something I generally find difficult.
Am off to bed for a bit. Had a wow (:eek:) of a day and need to regroup. Good to read all the stuff, brightened my day!

I think trying out new recipes/making my own up has helped keep me going this time - a change is as good as a rest - don't get stuck with eating the same old, same old every day!!

just weighed myself, and the 2lb i lost a couple of weeks ago, i have put back on. ive been trying so hard, following the atkins book practically to the letter, and using coconut oil.
Had so much bad luck lately, but managed to stay positive, but this has just really put me on a downer. might just go for a wee cry and a sleep.

im not gonna let the scales dictate to me, gonna hide them and then i wont let them ruin my diet.
