I get 24 free range eggs from a guy my dad works with for £1.50, so I never run out of eggs, thankfully because they are so expensive!
You could maybe get one of those stir fry packs, cook some of that with it, and add some soy sauce or something to it? They aren't too carby I don't think, OH bought me one from morrisons and I think half the pack was 5g? Not sure how strict you are being, but it's filling at any rate!0 -
Sorry to not respond to anyone, i am soo tired tonight.
I have read all the posts tho.
Came to bed at nine, but cant sleep (a first) think its cos i'm hungry, but i just cant cook anything, i have no energy
Cant even find the energy to read a book.
Will see you on the morrow, hopefully still alive and a bit more energetic.0 -
I am so tired, prob due to totm, although i dont usually get like this.

Cant wait for my gluten to arrive so i can have a piece of toast in the mornings.
Was vey tempted by my boys toast n jam this morning.0 -
mazzers, hope you perk up soon, I know you can't really be bothered but make sure you are eating enough, especially things with iron as it's TOTM, hopefully it will help.0

I admit I get a bit stuck on what to have with my main course too, not a huge variety of vegetables to play with really!
* Cheesy leeks
* Cheesy courgettes
Fry the above in butter until softened, add some cream or creme fraiche & warm through, add grated cheese of your choice & mix until melted. Season with black pepper.
* Garlic mushrooms
* Cauliflower cheese (same cheese sauce as above) maybe with cooked bacon crumbled over
* mazzers' roasted peppers (deeelicious!!)
* Roast veg (courgettes, mushrooms, cherry toms, peppers, onion (if you're not being too strict))
Will post more as & when I think of them

Good morning all :hello:
Mercy, glad you are feeling more upbeat & positiveThat's more like it!!
I'm going to try the salmon fishcakes tonight so will report back on how I manage!!
Daisy, I'm not fussed on sweetcorn but your tuna fishcakes sound lovely, think my kids would like them. I was thinking I could replace the sweetcorn with spring onion for me. Will give the chilli a miss though, after my previous reactions to it!! :rotfl:
Mercy, I will pm you the recipe for HC's pesto chicken - I had it last night & it was fantastique!! Really liked it. Yum, yum!!
My menu for today
B - pork escalope & 2 buttery scrambled eggs
L - to be decided
D - HM salmon fishcakes (hopefully :rolleyes:) with cauli/broc mash
Have a good day everyone, it's lovely & sunny here!!0 -

Just had cheesy scrambled eggs, and will take sweets advice and have spinach at some point, gonna google iron rich foods in a mo.
Have to admit, i'm never full of energy on lc, quite the opposite in fact, maybe i will perk up if i ever get to re-introduce fruit :cool:
