lego, I haven't looked at the recipe (this laptop doesn't like links) but avocado is supposed to be very good for you. Could the maple syrup be replaced with one of the LC sweeteners?? Stevia is one I remember but there are others.
g&b, was it beef stroganoff you made?? I lurve beef stroganoff *drools*. My Mum used to make a chicken & mushroom 'stroganoff' which would probably be ok for LC. She used natural yoghurt for the sauce & it had a lovely tangy flavour to it.
SHEILA, I can't understand why you haven't lost anything. Are you still considering the LC 5:2??

I'll copy and paste this then, so you can have a look! The quantities of maple are not huge, and I suspect one wouldn't need to eat an enormous amount of the pud. I must get some avocados to ripen.

"Vegan chocolate avocado pudding
For the base:
- 3 cups of walnuts
- 3 tbsp maple syrup
- 1 tbsp coconut oil
- 1/2 tsp salt
For the filling:
- 2 large avocados
- 1/2 cup maple or agave syrup
- 1/2 cup cocoa powder, extra for dusting
- 3 tbsp coconut oil
- 1/2 tsp balsamic vinegar
- 1/2 tsp soy sauce (I used nama shoyu which you would need to to make this raw)
- tiny pinch salt
- fresh raspberries to serve (optional)
Method:
1. Preheat your oven to 130c / 250f / GM 1/2
2. Make the crust by whizzing your walnuts in a food processor for about 10 seconds. Add the remaining base ingredients and whizz up again. Try to not blend it too smooth, you want it a little chunky for a nice texture.
3. Press the crust mixture into a tart pan and bake in the oven for about 30 minutes. After the time is up, remove and leave to cool.
4. For the filling simply blend all the ingredients together until completely smooth. Spoon over the cooled crust evenly and refrigerate for a minimum of 30 minutes or until you are ready to serve.
5. When you are ready to serve, either dust with a light sprinkling of cocoa powder or some fresh raspberries and of course if you are neither vegan or raw, then of course you're going to drizzle it with a generous helping of cream aren't you?! Sweets-I definitely think you are right about it being hormonal hunger! Who would be a woman!??
Building with lego - erm I personally wouldn't make that as it is a dessert and would make me reach for my coat to go down to the corner shop and buy maltesers! However if you cut out the maple syrup (replace with a sweetener) and the balsamic then yes it is low carb as long as you don't eat the whole thing.

Was really hungry this afternoon, stroganoff was obviously not as filling as my salad usually is. Probably lacking in fat a bit.
Had an extra coffee in the afternoon to keep me going.

gunsanbanjos - glad that you enjoyed the stroganoff. I have made it myself with steak, mushrooms, sour cream and cauli. Nice. Goulash is also good.
sweet - weighed again today and nothing but I haven't been in ketones. I am going to try to cut to 30 carbs and stop the decaff coffee to see if it makes a difference for the next few days. If not .............

extras: 85% chocolate, 1 brazil nut, 2 walnuts
drink - water
Total carbs 30

Thanks Sheila = 4 lbs!! So pleased!! I have realized that if you keep it strict then this diet is fantastic. Apart from the odd low/no carb alcoholic drink and the odd tomatoey sauce I have stuck to phase 1 and it is working so I am going to keep it like this unless I get a mad craving for rasperries or something. I have now lost 1 stone and 8lbs and now am 10 stone something which I haven't been for years:j
Meeting my friend for dinner this eve. Pretty pleased with myself as have managed to get us to go somewhere with cheapish Prosecco and a really nice antipasti board for a tenner. Very diet friendly.
