    I'm still here as well, just feeling overwhelmed, it seems we win one battle only to find that the enemy have snuck up behind us. The LA have withdrawn funding for DS2's 1:1 claiming that he doesn't need it, without holding a review or consulting any of the professionals involved with him. And DS2's dad has been kicked out and offering him the spare room is causing me huge financial headaches. So I'm going on a fat fast in retaliation, it'll both save money and knock off a few inches LOL

    I'm still here too, mostly lurking and finding life a little overwhelming-my mums health issues continue, we thought she'd be given the all clear yesterday, only to find that she has to have a scan as 'something' has shown up on her chest wall :(
    My sister (in Italy) had a baby who spent 5 weeks in Intensive care due to a congenital diaphramatic hernia- worrying times with major surgery, but thankfully he's made an amazing recovery, and went home last week.
    So, I feel exhausted with the worry.
    My eating is not brilliant, struggling to avoid the hot cross buns,cookies etc. My meals are mainly LC, its the snacks :mad:
    Anyway, with the promised warmer weather(pleeease), I'm going to make more effort to have things prepped in the fridge, and will buy more berries and things.

    :wave: Hello everyone, I'm still here as well, still LC and IF - ing and doing fine. I've just got my head filled with planning, windows, builders, structural engineering, building regs, and all sorts of other building things as well as establishing myself in my new local area.

    I've also started training to get another qualification - can't be getting complacent!! ;)

    So with a full head I'm just knuckling down and lurking/staying out the way.

    Flax fruit n nut bread

    3 med eggs
    4 tbls water – or more if necessary
    4 tbls of double cream
    12 tbls of ground flax
    1.5 teasp baking powder
    4 dried figs very finely chopped - no stalks :)
    6 walnut halves finely chopped
    Pinch of salt
    mixed spice (or ginger, cinnamon, etc)

    Use a microwaveable lunch container ~ 750 ml type

    Lightly beat eggs in container with water, cream, spices and salt
    Separately mix flax and baking powder.
    Add flax mix to container and mix well. If necessary, add more water to get a good, thick, smooth batter feel.
    Add chopped figs and walnuts.

    Cook for 5 mins or so full power in microwave. You’ll have to check by turning out. If still wet on the bottom, put in upside down for 1 min :) Turn out onto cake rack and allow to cool.

    Around 30g carb for lot.

    I have 12 slices from mine at an amazing 2.5g carb each.

    Lovely toasted with butter.

    This is not a cake but a naturally sweet bread. If you miss hot cross buns you could find out the mix of spice in those and add that.

    Will keep once cooled in an airtight container for at least 4 days. :)

    Personally, I think a few dried figs aint the end of the world :rotfl:
    And if you eat it all - you won't do that again in a hurry - figs n flax? Just think about it :rotfl:

    Anyway, makes a solid, heavy loaf of goodness. In minutes :D

    That sounds interesting. Would a mix of ground almonds and flax work, do you think? All flax might be a bit too much for me. :p

    I have tried making pancakes with half flax and half ground almonds and they seem to work. If anyone tries it then please let us know. I could do with this :D

    Mercy, do you think that this could be cooked in a oven?
