    Morning all, it's a very grey rainy day here on the Isle of Man! Yesterday was lovely and sunny, wish the weather would make it's bloomin' mind up, every day is different, I don't know whether I should be wearing a bikini or a balaklava ;-)!! On the plus side, my toddler slept late this morning so I got a bit of a lie in!

    Food for the day:

    B: Cheese and mushroom 2 egg omlette
    L: Cream of cauliflower Soup
    D: Grilled Harissa chicken breast with greek salad
    S: Olives and Almonds

    I've noticed that some people seem to struggle with breakfast ideas, me too! I've never been a breakfast person, can't eat first thing in the morning, I have 2 coffees and then I see if I can face something. I did try buying an expensive flax porridge from the Low carb warehouse and it was OK (flax with maple and pecan I think) but I didn't lose when I was eating that. After lots of trial and error I now have a little arsenal of standby's, will list below. Does anyone else have any interesting brekky ideas?

    Greek Brekky: 1 hard boiled egg, few chunks of feta, 3 slices of cucumber, 3 olives and 2 cherry tomatoes. Drizzled with olive oil and herbs.

    Continental: Few slices of cheese and ham, maybe a few olives or pickles on the side.

    Courgette frittata

    Indian Omlette made with chopped red chilli, spring onions and coriander.

    Half an avacado filled with cream cheese and topped with scrunched up cooked smoked bacon.

    Greek yog with berries and seeds.

  • I don't often eat breakfast either cherry.

    My fave brunch dish ever though:
    Eggs with Spinnach. (this is from a Nigella Express recipe I think)

    I wilt some spinnach, place in an oven proof dish, then I crack about three eggs on top. After that, I pour cream over and sprinkle with nutmeg. Finally, I grate a lot of parmesan over the top and place in the oven for about 20 minutes. YUM! I've tried this with other cheeses such as cheddar and mozzerella and this works too. Before low carbing,I used to eat this with fresh crusty bread..but NOT ANY MORE! Its lovely on its own!

    I also enjoy ham and eggs. or gammon & Eggs.

    Another quick one is scrambled eggs and smoked salmon, although I only eat this when I have got some salmon on offer. A few weeks ago, I happened to be in Asda at the right time and got six packets of smoked salmon priced at 50 pence, down from 3.99!

    Have you tried using trimmings packs? I know Tesco do this in their value line, assume other supermarkets have something similar. I get this for DH's sandwiches and it tastes as nice as normal pieces. Just doesn't look very pretty. It's currently unavailable online for me to double check the price, but from memory it's about 80-90p for roughly 4oz.

    Nice find at 50p though. :)

    Thats sounds lovely Jerry! I got some bargain organic spinach from Tesco yesterday (25p!) So I think i'll try that one. I'm sure I'll love it, as will my Husband who has been veggie for 20+ years. I love it when I find a recipe that I know we'll both enjoy, thank you!
  • I know I should not get involved with trolls, but Edwardia has really upset me today. I'm new to this thread, and one of the reasons I started posting was because she left. Anyway, she is now on other threads warning people that we are not supportive.

    I find this thread supportive. I find her to be unsupportive and unreasonable. This is the first time I will mention her and the last. I wish she would go and seek some help as surely, going through life, upsetting people can't be the right way to carry on!

    Jerryjerryjerry, the best cure for trolls is ignoring them. Feeding them gives them strenght. Forget about her. Look at how much nicer this thread is now, let's focus on being supportive to each other!

    I haven't been posting a lot because I am hovering between low carb and medium carb but still read the thread for ideas, it is lovely here now, while before I had second thoughts about staying. Look at how everybody is respectful of each other now, this is a good thing! People will make up their minds about the thread once they come here.

    Edited to say, I added my tuppence to the other low carb thread saying that it is very supportive in here - people will be able to decide for themselves once they pop in!
    Finally I'm an OAP and can travel free (in London at least!).

    Perhaps you need to blind her with science? How about printing out this report on Chris Gardner's research from Standford Medical School (not a blog so it has more credence). Use a highlighter to pin point paragraphs 9 and 10 which outline the increased weightloss and improved blood chemistry. Give her the link to the lecture as well and ask her to watch it so that you can discuss it in future. And the study results were published in JAMA so you can print it out in full or give her that link as well. OK, it's not perfect as this was done in pre-menopausal women, but it should be enough for her to say "ok, I'll take a look, lets talk later".

    Take absolutely no notice of her Jerry. She winds me up something rotten and sometimes I can't hold my tongue and take the bait, which I know I shouldn't! She seems to have a very obvious case of Narcissistic personality disorder and we should all just completely ignore her. She doles it out by the bucket load but can't take the merest sliver of criticism and the concept of debate is lost on her. Very frustrating woman!

    Had a very productive morning. Got the tea slow cooking in the oven, and a chicken carcass cooking on the hob ready to make soup with. Just need to boil a few eggs and I should be organised for the rest of this week. Today is usually my allotment day but as its raining I took the opportunity to spend time in the kitchen getting organised.

    cherry, the soup sounds deeeelicious!! Thanks so much for posting that, I'm going to give it a try as I lurve soup.

    caz, the GG crispbreads are available from Holland & Barrett, 2.9g carbs each, very high fibre, great buttered with cheese, pate, tuna mayo, salmon mayo etc. I think there's a link on page 1 of this thread & they were discussed & linked a couple of pages back as well.

    jerry, the spinach recipe sounds lovely, I'll be trying this as well, thanks.

    Hi to LittleMiss - I remember you :D

    Mercy's mexican fudge (on page 1 recipe section) is another good breakfast idea (good for durham too as it's quick & easy to throw together & you can just reheat in the microwave) - I'm going to make a different version (based on a Slimming World recipe which uses cottage cheese instead of cream & without the mozzarella base) in the next couple of days.

    Oops, turning into a mega-post again :o

    B - 2 egg mushroom scrambled eggs
    L - 2 GG crispbreads with salmon & spring onion mayo, cherry toms
    D - gammon or chicken with cauli, broc, green beans, cheesy leeks

    Strawbs & blob of greek yoghurt at some point, almonds for evening munch.
