Desserts - at the moment my repertoire is almond meal pancakes with berries and cream or chocolate mousse. Could give the cream a miss for MIL.
That sounds like a good idea! How do they cool, would they work for a pancake stack?
I could use zuzzed up berries (maybe with some chia seed to gel them) between the layers and make a sauce with 90% chocolate and coconut oil which will make a quick, firmish drizzle icing at room temp. You can tell I miss it can't you :embarasse
I have a problem with belladonna - that's potatos, tomatos, aubergine, peppers, chillis etc - which makes food choices quite interesting. It's not overly serious but eating them certainly doesn't help the problems downstairs LOLEat food. Not too much. Mostly plants - Michael Pollan

SHEILA, perhaps you could try the tactic of shocking your bod out of it's complacency, if you eat at regular, set mealtimes. Keep it guessing, and maybe also alter the amount of calories you ingest from day to day....some days more, some days less...but with an overall mean balance per week. You could also perhaps apply this to the amount of carbs you eat day to day too.

I tend to eat 3 mainish meals and a couple of snacks as I fare better this way with my stomach problems. Maybe I should work out how many calories I need a day - 500 and then , as you say, go higher for 2 days and then lower for 2 days, cyclically, basing it around carb counts. Had also thought of going up to 100 carbs for a week and then cutting back drastically but don't know if I would enjoy it too much to have those extra carbs:D
daska - the pancakes are more like american pancakes or drop scones and I have tried to make them more liquid but it doesn't work. Use ground almonds for flour, cream for milk and egg. You could stack them but they can't be too big or they collapse when you try to turn them over. I have just found out that I have a low thyroid and, as coconut oil is recommended and I want to try to control it with diet, wondered where do you get yours from and any other tips?
I am thinking of trying to make tiramasu without the sponge and with decaff coffee as well.0 -

Just eaten an earlyish (for me) tea, normally i eat a bit later on this shift so i`m quite pleased with this
Brekkie today was bacon, scramblies and mushrooms, dinner was a ham and mustard mayo sandwich and tea was spag bol with courgette ribbons. I had a snack earlier of a whole bar of dark choccy with ginger
I`m trying to muster up energy to cook a chicken ready for tomorrow but think that i might as well just actually cook it tomorrow even though DH and i will be eating at different times.
My enormous vitamin order arrived today :eek: DH will be rattling soonI`ve always taken vits since i was a teen but have only been consistent with the vit c since then. I take a multivitamin, evening primrose, cod liver oil and gingko each day. Now that the CoQ10 has arrived i will be taking one of those too. I`ve put DH on all of the above with the exception of evening primrose. He also started on aloe vera in liquid form two days ago and reported that it tastes vile but this form works out better value so is putting up with it for now
He also now takes glucosamine and chondroitin.
Daska - DH has been off the nightshade family of veg recently and had some yesterday and will be having another small amount today, it will be interesting to see whether this has any effect or not - i`m hoping that he can tolerate small amounts once or twice a week as it makes cooking for both of at the same time possible.
Toenails - hmm, last time i did lc all mine went weird and i put it down to not enough different veg over a long period as i went hardcore for a while. This time i`ve included different kinds and plenty of it from the start and have been more or less fine, my toenails seem a slightly darker colour and tougher but i put that down to feet wrapped in thick socks all winter and it will probably go away in summer when my feet can see the sun a bitI have just found out that I have a low thyroid and, as coconut oil is recommended and I want to try to control it with diet, wondered where do you get yours from and any other tips?

Sheila - i buy coconut oil in tubs from holland & barret, have fried food in it as it is food grade and i find it a fantastic moisturiser too. If i get a bit of a zit beginning a couple of days applying the oil gets rid and my skin is lovely and clear. If you manage to sort out the tiramisu recipe then please do let us know - its one of my favourite deserts of all time

Hmmm, doesn't sound too promising for a good size cake then. I might have to stick with the cheesecake. Or clafoutis. I'm usually quite adept at thinking outside the box. Depends...! The Tiana range from Holland and Barrett is reliable if expensive. I have had other brands from there which have been fine as well. They've got a BOGOHP on every item in the shop at the moment. I've also ordered it from 'reputable' online retailers and been very disappointed in the quality.
I find I can eat a teaspoonful of it on it's own, no more that that easily, but it's not cloying like say olive oil. It lends itself easily to thai food and baked goods and... remember that gross 'ice magic' stuff that used to come in bottles, well you can make a nice version of it at home. Bittersweet chocolate is about equivalent to Bournville, which personally I find way too sweet. I'd use a minimum 85%, preferably higher. But it leads on to thinking about ways of ingesting coconut oil. One I'm toying with at the moment is making sweets with 99% chocolate (not easy to get hold of but I have half a bar left), flaked almonds and coconut oil.I am thinking of trying to make tiramasu without the sponge and with decaff coffee as well.

Morning all.
Not due to weigh until Monday but got impatient (again!). I'm still the same weight as I was on Monday past. It's not changed at all each day.
I suspect that's down to losing so much last week/having one higher carby day during the week.
It's not a problem, it's just embarrassing when people say 'and how much have you lost this week' and you have to say 'nothing. :rotfl:
