I've got an easy Almond Shortbread recipe in my 1950s Good Housekeeping cookbook:
4 oz butter
6oz flour
2 oz caster sugar
3 oz ground almonds
1/4 tsp salt
Beat butter till soft, rub into dry ingredients and make into stiff dough. Press into baking tin (not sure how big!) with knuckles, bake at 180C for about 3/4 hour or until firm. Cut while warm but don't take out of the tin until cold or it will crumble. You can add choc chips if you like!0 -
I don't know whether you can find clementines this time of year, but this recipe also works well with lemons, mandarins and oranges. It's Nigella's Clementine cake recipe. It is delicious and gluten free.
