  • Maybe a cherry bakewell tart? You could make your own shortcrust or use a ready made one, add cherry jam (I think), not sure what you do with the ground almonds - but I think it's similar to a sponge mix with almonds instead of flour. Top with icing when cool, and add a glace cherry. Sorry I can't be more use but I've only ever eaten them, not made them!

    Hi LS,

    I agree with DFS, cherry bakewells. My kids (and their friends!) love them. I find they are easier to eat/pack for lunch if you make individual ones in patty tins. This is a variation on the Bero recipe.

    200g short pastry, chill 30 mins then roll out and cut out 8cm circles

    tsp of cherry jam in bottom of each. (I made some which didn't set properly but it's perfect for this). Bero says also lemon curd but I would experiment with whatever you have.

    Top with mix:

    50g marg (I use vitalite as lactose intolerant)
    50g caster sugar
    50g ground rice
    25g ground almonds
    1 beaten egg
    Few drops almond essence (optional)

    Cream marg and sugar
    Mix together almonds and ground rice
    Add to creamed mix alternately with beaten egg (essence added at this point)

    Put tsp of mix on top of cherry jam in case and bake for 20-25 mins (350-375F, 180-190C, Gas 4-5).

    Allow to cool.

    Chop enough glace cherries in half for topping (usually 12).

    When pies cool, mix 100g sieved icing sugar with enough (approx 1 tbsp) warm water the make icing. 1tsp each pie should be enough. Top with halved cherries before icing sets completely.

    definitely macaroons!

    3 eggs whites, 100g ground almonds, 50g icing sugar, pinch salt, 25g normal sugar

    -whisk up egg white with pinch salt until standing in peaks. fold in almonds and sugar (at this stage i add a little red food color to make them pink!). pipe onto a baking sheet, you want them about 3-4 cm across. bake at 160 for 12-15 mins. cool and then sandwich as u like, i suggest a little buttercream, jam or whipped cream. so pretty!

    Oooh, mummyoftwo I havent got a pipe to pipe them on the baking sheet does that matter???

    No, it'll only affect the shape of them so you could just spoon them onto a baking sheet and fiddle with them to make them look a bit more elegant. I expect they'll taste just as nice but just look a little "rustic"
