i made some as part of a special valentines meal using large prawns and they are soooooooooooo easy and yummy

i tried them with a mix of cream cheese and pesto instead of cheese spread,then topped with a bit of feta popped back in the oven for a min to melt slightly
also might be nice with sundried tom pesto and mozzarella ?
this one sounds nice : Tuna, corn and pesto crostini
Serves: 2-4
4 thick slices baguette/French bread
1 garlic clove, halved
olive oil
1 x 200g can tuna in brine, water or oil, drained
or 1 x 200g can red salmon, drained
1 x 200g can sweetcorn, drained
1 tbsp pesto sauce
2 tbsp reduced fat creme fraiche
or light mayo or Greek-style yogurt
freshly ground black pepper
Preheat the grill to a steady medium heat. Rub the bread with the garlic halves then brush both sides lightly with oil. Grill on a low setting so the bread becomes crisp before toasting. Do this on both sides.
Meanwhile, flake the fish and mix with the corn, pesto and cream base of your choice. When the bread is nice and crusty, divide the mixture between the four slices, mounding up in the centre.
Return to the grill to heat through and serve warm, seasoned with ground pepper to taste0 -

put newspaper on top of kitchen units and replace them every month to keep units cleanClingfilm is better and unobtrusive and it will stick to surfaces, spiders hide under newspapers
roll a newspaper into a tube to keep the shape of long boots etc.
Magazines are sturdier than newspaper, and you've always got something to read
*put half a lemon in the dishwasher to keep it fresh
Buy lemons in bulk if you do this, you'll need a fresh one every time (don't forget to buy recipe book telling you what to do with cooked lemons)
*cut feet off tights and fill with lavender tie with a ribbon and put in linen cupboard or ib drawers etc.
Wrap cheap pot pourrie in several prettily patterned tissues and secure with thread, who wants to look at worn out tights feet every time you open a drawer - and what would the burglars think
use baby oil on stainless steel to clean and stop fingerprints
Clean properly then use soft cloth and elbow grease to save money; make all members of family wear surgical gloves in the kitchen
Eat chocolate when getting married and get wedding paid for

Honestly, I'm not just plugging this book because I know the author, but because her methods really do work and they have helped me just as much as this site has. BTW this isn't the only home management book I have, I have 2 others (and I keep buying them when I see them) but this is the most clear and interesting one I've read yet.

Nicki, Congratulations on your appearance in the book. Please, please don't think I'm having a dig, but anyone who needs a book to tell them how to organize their paperwork or when to buy clothes ............... words fail me !

I'm now off to lower my blood pressure by sticking a vinegar poultice on my fevered brow whilst I make a plan to remove Anthea from my telly using bicarbonate of soda :cool:0
