A challenge to you all

OK, here goes.
2010 is the year of our 25th wedding anniversary and my 50th birthday.
We have set a budget of £3000 and we want a very special holiday, the thoughts so far are Japan, Bali, Mexico, Australia etc etc...
We probably want one destination, and certainly flying from Manchester. Any thoughts?
I may add other things as suggestions come in.
Anyone who has done something similar would be most helpful.

I have never been to the far east so cannot really comment only to say I would love to visit Japan. I would say that Mexico is amazing, and depending on what time of year you want to go, should be high on your list.

My holiday of a lifetime was to this resort in Fiji, my second favourite place in the World after Fiji...

    http://www.castawayfiji.com/

Heaven on Earth location with some of the most beautiful and gracious people you could wish to meet. Gourmet food all day every day, nightly entertainment and a full programme of available activities if you so wish.
If you have ever thought of a romantic champagne beach BBQ for two on a deserted island where a boat will pick you up the following morning, it is possible here.

Alternatively, a few of my friends have stayed at this resort and loved it...

What do you expect to get out of the holiday? - you obviously want an experience, but do you want some beach in with that? - or to see cities?

How did you get to Fiji?
    Did you go from Manchester?
I could do London for a special holiday.
