    How many meals did I do?? You have enough ideas and leftovers for three weeks xxx

  • lamb mince can be substituted in any recipe calling for beef mince. So burgers, meatballs etc etc.

    I'm afraid we eat alot of pasta/rice/curry/spices so can't really help with recipes but my OK loves mince browned off with diced onion and carrots a tin of toms and tin of baked beans added, the liquid rediced down then spooned into individual pie pots lined with pastry and topped with pastry then baked until golden. Total comfort food and i make 8 at a time and then freeze for him before cooking the pastry.

  • Mince, Onion and Carrots and potatoes... cooked and placed in a pie!! (My pies always last 6 portions) add mash and veg on the side!

  • For the lamb mince - you cant beat a shepherds pie or savory mince hotpot

    chicken thighs - chicken casserole, chicken chasseur, coq au vin, sticky chicken

    Sausages in onion gravy with mash and veggies
    toad in the hole

    Cook some of the sausages and keep them cold and ready-to-go in the fridge for quick lunches.

    Nice with some crusty bread, bit of pickle or mustard and a tomato for an easy lunch.

    Reheat in the microwave (if you have one) and split in half, pop into a nice floury batch with an egg on top and a bit of sauce.

    Chop up and heat up in a saucepan with some baked beans to top a jacket potato.

    Will he eat an omelette/tortilla type thingy? Fry up a bit of left-over chopped spud and onion with chopped cold sausage til hot, pour over seasoned beaten eggs. When base is set, pop under a hot grill to cook top which will puff up and brown slightly. Easy! Slice into wedges and serve hot or cold.

    BRILLIANT THANKYOU! Writing this all down on my wee pad LOL! We love lamb mince, not keen on beef. He wont eat a baked bean, if he sees one in his dinner he will throw a tantrum :rotfl:
    I want to ask how you make toasties ?
    And I forgot eggs, yes he likes eggs and you can shovel anything into an ommelette :D
    And although I make a lot of HM soup, somehow I had never thought of chicken soup. :)

    Toasties.... yummy and simple!

    Mix leftover sheppard/cottage or whatever pie with a little gravy!

    Butter Bread and place inside a toastie machine... add two tablespoons of the pie filling inside each one... toast until sealed and cooked!!!

    ^^^ And if you haven't got a sammidge toaster, fear not. Make 2 slices normal toast, put filling in (if using cheese, make normal cheese on toast), and smoosh together as if sandwich. It feels a bit silly saying that, but I have encountered people who don't realise you are allowed to do it that way!

    They're better when you have got one though... *pines for the Breville*.
  • if you've got plenty of sausages, don't forget good old toad in the hole, serve it with mash,any veg you like ( I like carrot & swede mashed together with this) & onion gravy yummy!
