How Do You Make Mint Sauce?

does anyone know who to make mint sauce?
i have loads of mint growing in my garden, and my youngest son loves mint sauce, last year i tried making it, and it was well disgusting really, this year as i am knucking down with my spending, and getting back to proper cooking,
i was hoping that maybe someone might tell me how to make it, and preserve it, so i can make a load in one go, to save time. and money as my youngest has mint sauce with neally everything..... :hello:

    I use normal malt vinegar, and chop the mint up finely!!!

    CHOP IT FINLEY WITH VINGAR. ALSO FREEZE A FEW BAGS OF MINT THEN YOU ALWAYS HAVE A SUPILY FOR YOUR NEW POTATOES ETC :rotfl:

  • If you dry the leaves first they crumble up very very finely (I stuff mine throught the mincer) and you can get lots lots more in the bottle, heat up some vinegar with a teaspoon of sugar in it an pour over, allow to settle and top up.

    Then put bottle in a pan surounded by enough water so it won't float; bring to the boil; simmer for 10 minutes or so, turn off the heat wait a minute or two and put the cap on firmly and allow to coo off.

    Voila - Vacuum sealed bottles of mint sauce.
    The quicker you fall behind, the longer you have to catch up...
  • thanks...for that.. i was chopping the mint, but i thing i wasnt chopping it fine enough, will go and have a look at the recipe as well....angain..thank you..

    Chop it very fine with a little sugar. Then put a small amount of boiling water on it. (You can do this in a cup) It helps to get the flavour out. Then add your vinigar.
    I used to be indecisive but now I am not sure.

  • once again thanks for all the tips, i know now where i was going wrong....and it sounds really easy......cant wait for my mint to start growing now.....my sissors are waiting.......... :whistle:

  • I've loads of mint in my garden, and want to make it into mint sauce or jelly (preferably) to use later in the year. Does anybody have any recipes and how long will it last? Thanks!!

    quick mint jelly from GH book of preserving very good recipes!

    1/2 pt white vinegar1lb sugar
    2oz fresh mint
    227 ml bottle pectin nr sugar in tescos!
    2-3 drops green colouring optional

    vinegar and sugar in large pan with 1/2 mint sprigs heat gently till sugar has dissolved
    strain to remove mint
    return to pan and boil for 1 min stir in pectin boil 2 min
    chop remaining mint stir in add colouring
    cool slightly stir to distribute mint
    bottle!

    also minted onion salad

    make mint sauce with fresh mint
    (chopped mint malt vinegar and sugar)
    slice onions into circles put in a large jar add mint sauce put lid on will keep for ages! needs at least a week to marinade!
