    Handful of mint. Chop it.
Small amount of boiling water about an eggcupful, small teaspoon of sugar. Stir and dissolve the sugar. Add three to four times the amount of any vinegar. Add the chopped mint.
    Mintilicious.

Not totally off topic as still about mint.........

I've got loads of chocolate mint in the garden. Previous years I've just chopped it up as fine as I can and sprinkled it over ice cream............is there anything else I can do with it ?

Chop it very fine with a little sugar. Then put a small amount of boiling water on it. (You can do this in a cup) It helps to get the flavour out. Then add your vinigar.

    my method as well
