I'm cooking one of the shoulder joints from my Chatsworth show lamb (everyone come round about 6-ish, is that ok
).
I USED to be able to make mint sauce but last time I tried, it was awful. Can anyone tell me a method they know works... I have fresh mint in the garden and dried in the cupboard. Happy to try both.
Thanks

Chop the fresh mint up really fine with some sugar and then let it sit in apple cider vinegar. Adding the sugar while you are chopping it means that the juices that come out go in the sugar and not on the board.0

As above, with the addition that I put between a teaspoon and a dessertspoon of boiling water onto the mint and sugar and add vinegar to taste after it has cooled (my Gran wanted malt, I prefer cider or white wine vinegar)0

Thanks both, I'll give it a go
