    Yesterday I bought fresh mint in a pot from Morrison’s, so I have a few questions my first question is how to look after it, such as where to place it in my flat, and how often to water it, and how long could it be expected to last.

    My second question is how to harvest the leaves and make the mint sauce, I need to know the ingredients and method, and possibly any tips regarding freezing I look forward to all the advice from you wonderful people.

    Pop the plant on a windowsill and give it a little water every couple of days.

    Just chop off the leaves you need along with their stems. Finely chop the leaves and discard the stems. Put them in a bowl, and pour on just enough vinegar to cover them. You can leave it to sit like that for up to an hour or two, or use it right away. When you're ready to serve, top up with boiling water and taste it. You may need to add a little more vinegar or water - some people also like to add a spoonful of sugar.

    I find potted herbs only tend to last a few weeks in my house, if it starts to look a bit peaky, pick all the leaves, finely chop them and freeze them, then you can use them from frozen.

    I just chop up mint, add a spoonful of sugar and cover with malt vinegar, lasts for ages!

  • Haven't made mint sauce since I was a kid but the way I was taught was to finely chop the mint leaves and put in a pot or jam jar, pour over about 2 or 3 tablespoons of just boiled water, add a teaspoon or two of sugar (stir to dissolve) then add some vinegar, a teaspoon at a time, to preferred taste.

    MINT SAUCE

    Making your own mint sauce doesn’t make sense economically, unless you grow your own mint. A bunch of mint costs 65p, a jar of mint sauce can cost as little as 25p. However, before you buy it, read the ingredients on the jar.

    INGREDIENTS

    A large bunch of mint
    50g of sugar
    150ml of malt vinegar

    METHOD

    Wash the mint. Shake off any excess water.

    If you have a food processor, put all the ingredients in it and process them until the mint is finely chopped.

    If you have a hand blender, put all the ingredients in a bowl and blend them until the mint is finely chopped.

    If you don’t have a food processor or hand blender, finely chop the mint by hand. Put all the ingredients in a bowl and mix thoroughly. Leave for 10 minutes to allow the sugar to dissolve completely.

    ADDITIONS & ALTERNATIVES

    Use granulated, caster or brown sugar.
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)
