Sorry if this is a stupid question but I have just tried my first attempt at making home made mint sauce with mint from my garden. It tastes okay but the mint is a bit "bitty" I?YKWIM - do you have to cook the mint first? I didn't and I wonder if that's where I've gone wrong. Any answers appreciated as the lamb shoulder is in the oven and will be cooked in about half an hour!Jane

No you don't cook the mint. You just chop it finely.Val.0

I just cover the mint with boiling water - this softens it slightly, and extracts the mints oilsIt also needs less vinegar that way.

i chop the mint really finely - until it looks like green sludge! add a small spoon of sugar and a little boiling water then top up with malt vinegar.0

Thanks! Actually the mint softened in the time between making and eating and it was lovely and fresh tasting on the lamb. Much nicer than ready made but the kids moaned that it was not as nice!Jane

lol - i prefer ready made too!! but when you got mint growing - you use it!!! er a stupid question i know - but I once caught DS1 doing this - did you pick the leaves off the stalks before chopping? dont be offended please, as DS1 pointed out - how was he to know??????????? try adding the spoonful of sugar - i bet the kids will like it then.
tip - dont use fresh mint in minty mayo - doesnt work - only the jar one will do!0 -

I bought some fresh mint (not a plant) for a Turkish recipe and I still have quite a lot left.
Can I chop it, add vinegar, pepper (maybe some sugar) and store it in a clean jar that previously had horseradish in?

I do that every year with mint from the garden. Warm the jar first, I use the microwave with a cup of water next to the jar, then pack it with the mint add some sugar and pour over hot vinegar. Keeps for ages you can add more vinegar if you want to make mint sauce.0

Anyone know the quickest and easiest way to dry mint for later use so it can be stored in a jar/container?
