Incidentally, organic isn't vegan either as blood, bone and fishmeal are used instead of chemical fertilisers. The only vegan way of growing is stock-free organic - which is what I will be doing when I get my allotment.

Yum! I love malt loaf - does this come out like the Soreen one?
It's not quite as soft and sticky as the Soreen one - although you could probably make it so by adding more malt. It's much bigger than the Soreen one thoughBut the fruit is lovely and plump because it's been soaked and it's a very most loaf. We all really enjoy it and it's so easy to make.

Day 4 of being vegan and I think I've fallen off the wagon a little. Not that I've not stuck to the diet, just that I keep eating junk food!

also, you need more protein. If you crave salty stuff, try peanuts/nuts rather than crisps. Dip veggies into hummus/dips instead of crisps. This isn't OS, I'm afraid, but for those "emergency sandwiches" Aldi sells vegan pate in a small tin. It's available in vegetable, mushroom and olive flavours and is very nice. Keeps in the fridge for 7 days after opening too so if you only want it for a couple of biscuits you don't waste the rest.0 -
Hello all,
Had a lovely dinner last night: enchiladas! I used some already cooked spicy TVP mince that I had stashed in the freezer, heated it up in apan and fried up some veggies with it (tomatoes, green pepper, mushrooms and onion) with some more spices. Then I wrapped the mixture in tortillas, popped them in an oven proof dish and smothered them with passata before baking for about 20 minutes. When they were done cooking I popped OH's back in the oven with a little grated cheese over the top. I had mine with a quick salad of avacado, lettuce, tomato & celery. Delish!
Query for you all: has anyone tried making their own seitan? We had it from a tin (sold as mock duck) and the OH loved it so I was interested in making it myself. All the recipes seem to call for vital wheat gluten which I have located online for not too much money but the shipping is pricey. Obviously buying a bulk load of gluten would making the shipping cost more worthwhile but since I've never made the stuff myself I'm somewhat reluctant to order 15kg of the stuff! Any opinions on seitan welcomed:D0 -

I've had a couple of goes at it. I bought the wheat gluten from flourbin.co.uk when I was ordering flour so that the shipping wasn't too bad (but this was a couple of years ago and the gluten is way past it's BB date (I checked there was nothing crawling in it, so it IS still vegan), so take what I'm saying about the final result with that in mind :rolleyes:).
After making the seitan according to several recipes online I boiled mine. But it went hugely puffed and and didn't seem to be of the texture that the recipes suggested. It tasted nice, and I used some in pasties but I did feel that something wasn't quite right. I'll have to have another go when I can get hold of some fresh gluten I think!
I'd be interested to hear how others have got on and any tips
(it looks kind of disgusting, too)

Ive just seen the thread for fruit cake recipes and it reminded me of how much I used to love fruit cake, Ive looked at a few of the vegan recipe sites but cant find anything, has anyone got a recipe for it ? Now Ive thought of it Im really craving someReal stupidity beats artificial intelligence every time.

I don't have a specific recipe for fruit cake (not a fan) but I would imagine that most of them can be veganised quite easily by replacing the butter with vegan margarine and the eggs with ground flax seeds. Flax seeds aren't great for all baking particularly light things like sponge cake but I'd image that something as robust and highly flavoured as a proper fruit cake would be fine!0
