Going vegan......old style?!

  • Hope this is the right place for recipes - sorry if not.

    This is a delicious malt loaf, vegan but anyone non-vegan I've shared it with has loved it (& one fiercely anti-vegan hasn't yet sussed it and actually asks for it :rotfl:) It's also extremely easy to make:

    12 oz of "value" mixed dried fruit.
    1 mug-full of hot tea
    1 large tablespoon malt extract
    3 oz sugar

    mix those ingredients and leave to soak overnight.

    The following morning, stir in 12 oz SR flour. Mix 2oz of soya flour with water to make a thin cream and mix that in too (or use any other sort of egg replacer you normally use)

    Pour into a greased loaf tin (should be dropping consistency, if not add some soya/oat/rice milk or water) and bake at Gas 3/170C/325F)for 2hrs. As it's a long time cooking, perhaps make two and freeze one.

    Lovely with a bit of vegan spread on it :)

    Can anyone recommend a vegan mousse like dessert? I have found loads of recipes but would like a tried and tested!

    Isn't kahlua a coffee liqueur?

    I had an idea it was something alcoholic, it sounds lovely, shame I cant drink because of my meds. :rolleyes:

  • Couldn't you just replace the kahlua with the equivalent amount of very very stong coffee. E.g use a 1/2 tsp instant coffee with just a tiny bit of water?

    I just made vegan cupcakes for the first time - you know, I always thought baking would be a bit less appetising with no eggs, but these cupcakes are really light - lighter than my old non vegan recipe I think. I was a little heavy handed with the vanilla essence (probably because of the flavour of the milk in addition to the essence), and they are paler than their eggy counterparts, but I will certainly make them again.

    Ok I was very worried about pure but looked on the website says it is made by matthews food. Bernard matthews has a different company address. I hope this means that they are two different companieds with a similar sounding name.

    My husband's called Matthew, I wonder if he's secretly building up a consumable spreads empire? :cool:
