Do any of you have any good recipes for cakes etc and what you recommend.

    Sponge Cake

    2 cups SR flour
    1 cup caster sugar
(1/4 to 1/3 cup cocoa powder if you want a chocolate cake)
    1 tsp baking powder
1/2 cup soya (or any other non-dairy milk)
    1/2 cup oil
1/2 cup orange juice (or replace this with milk or water and use a couple of tbs of vinegar or lemon juice)
2 tsp vanilla essence (or orange or lemon if you want those flavours)

Sieve the dry ingredients together, mix the liquids together then mix well into the dry ingredients. Pour into a greased and line 10" x 8" cake tin or 24 cake cases and bake @ 180c for about 30 minutes (can never remember exactly - you'll have to keep checking) for the large cake, and about 12-15 minutes for the small cakes. If you want to make a round cake then reduce the temp to 160c and cook for about 1 hour.
  • Loving this thread!! :T

Several of you have mentioned nutritional yeast flakes. I've seen these listed in a few recipes too, but have never been able to track down anywhere that sells them. Can anyone point me in the right direction? :)

I have the same brand except it comes in a blue tub - it has B12 added I think. I got mine in the organic food co-op but I've seen it in health food shops too.

Linky showing the kind with B12.
Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)
Sorry if I don't reply to posts - I'm having MAJOR trouble keeping up these days!

I'm not sure but I have a feeling it is relatively new so maybe it's just a matter of time before your usual shop gets it in. I must remember to use it more, it really does taste nice!

Ya, I love it too... great when making gravy. I also add it when I make my various faux meaty things as it adds a really savoury, rich flavour... you know the fifth taste, umami! ;)

For those who are put off using soya milk in their tea because it 'just doesn't taste the same', Tetley has produced a new blend of tea specifically designed to work with soya milk so you can still have your favourite cuppa and be compassionate at the same time. This new black tea has been specially blended to compliment the taste of soya and is available from selected Sainsbury's and Tesco stores.

I got a copy of Vegan With a Vengeance from my library the other day, and tried making the veggie burgers. Has anybody tried making these successfully? I ended up using the mixture as a base for shepherds pie as it was too sloppy to hold together. I did use frozen soya mince though so that might have been a factor. I would be interested to know if anyone else has tried it.
