just wondering what everyone thought on using meat substitutes, ive always thought it a bit odd for a vegan or vegetarian to eat a meat alternative ie sausage or burger, personally i dont touch them0

I wouldn't think normal flour would work, no.
The first time I ordered wheat gluten, it was from Low-carb Megastore. I remember the postage was quite expensive, so I ordered about 10 or 12 bags. When it came, the expiry date was within a month or two, which I thought was pretty poor.
Now I buy my gluten from the US from iHerb. I order a lot of things from them... vitamins & supplements, bar shampoo, toothpaste, natural no-cal sweetener, etc. Unbelievably, shipping is only $4 to the UK (yes, dollars not pounds!), I have no idea how it can be so cheap. You have to keep your order under three pounds in weight to get this rate (as you add things to your cart, the weight is calculated automatically). Also, I always keep the order under £17 (usually under £16 just to be safe), so that no VAT or duty is payable. (When you are logged in, the value in £ is also shown.)
If you're interested, I have a code you can use to give you $5 off your first order, but I'm not sure if it's against board rules to post it, so PM me if you (or anyone else) would like it.
The only other place in the UK you can get gluten from (that I'm aware of) is FlourBin. Again, their gluten is cheaper than from iHerb, but their shipping more expensive.R.I.P. Bart. The best cat there ever was. :sad:0 -

re: seitan...if you haven't tried it, I'd say to give it a go. It tastes *nothing* like tofu. I've actually served it a couple of times in fajitas and in a bbq sandwich, and the people eating it thought it was chicken! You can use regular whole flour btw, but then you have to "wash" the flour and it takes forever and a day. For the Londoners, there are several varieties at Whole Foods Market (especially the large Kensington shop), and a couple at Planet Organic as well. On a larger scale, you can get Redwood's chicken-style pieces, which are similar, at Holland & Barrett. Our local hfs also sells some seitan in a jar but it's not great. Mock Duck = often seitan under another name, as well.

I got it in our organic food co-op which is brilliant for stuff like that. I think they might have seitan too ... must investigate.
Trying to spend less time on MSE so I can get more done ... it's not going great so far!
