    I tried a recipe from that e-book. The one I tried was the White Cake (which is really just a plain sponge) with a chocolate icing on it. I don't think it will replace the recipe I usually use. It's tasty, but more fiddly than my normal one. I will use the icing though, which was scrummy. The next one I want to try is the carrot cake, so I'm off to buy some carrots tomorrow!

    This thread is really making me want to give up the meat and dairy again. I went vegan as a bit of an experiment for two months earlier in the year and I remember I felt so healthy and lively. But now I need to get a LOT of protein because of my fitness regime right now :(

    I've been vegetarian for 20 years... was vegan off and on during that time, but have been vegan again for the past 7 years or so. I find that my need for protein has increased over the years, so now I try to have protein at every meal... for breakfast this might mean tahini on toast (weekday favourite), or veggie sausages, beans or scrambled tofu (weekends). For lunch I'll often have hoummus or a bean salad. For evening meal, something with beans or tofu or veggie sausages or veggie burgers, etc. etc.

    For an added protein boost, I really like this protein powder:

    Pulsin' pea protein

    Nice in a smoothie with juice and a banana.

    Not sure if it's not the done thing to mention another forum, but you will probably really benefit from a fitness-based vegan forum to get inspired by all the fit vegans, and know how it's done: https://www.veganfitness.net - hope that helps.     We're a vegan family. We do cloth nappies/wipes, dabble with ECing, use toiletries without parabens/SLS etc, co-sleep, baby-wear, BF, BLW, eco-ball laundry, and we plan to home educate (ideally not at home too much - we want to travel the globe).:starmod:

    Although not officially vegan my son has to cut out dairy so have been reading your thread with much joy.

    Do any of you have any good recipes for cakes etc and what you recommend.

    Also are any of the online retailers better for online purchases than the others. Am needing to order chocolate spread in bulk.

    The best deal you'll get for buying in bulk is if you can join a food co-op. You can find if there is one near you here:

    If there isn't one near you, you can always start your own :)

    You can save quite a bit over shop cost... we order Plamil chocolate orange spread (food of the gods) for £1.73 each vs. around £2.24 in the shops (when you can even find it).

    Here's one I posted a while ago:-

    DARK STICKY GINGER CAKE


    8oz/250g plain flour (white or wholemeal, or a mixture)
    2 tsp ground ginger
    1/2 tsp bicarb
    4oz/125g soft brown sugar (light or dark)
    5oz/150g treacle or molasses
    5oz/150g syrup
    3fl oz/90ml oil (or even a bit less - but make up the difference with soya milk)
    5fl oz/150ml soya milk

    Heat the oven to 150c/300f/gas 2. Grease and line a 9" square tin.

    Sieve the flour, ginger and bicarb together. Melt treacle, syrup and sugar gently together, then add oil and milk, mixing well. Pour onto the dry ingredients then pour into the tin and bake for 50-60 minutes. Leave in the tin to cool for 1 hour.

    The original recipe also has 4oz chopped dates and 4oz stem ginger added in, but I don't usually use them (I've made it with the dates before and it's nice).

    Also, I usually double the ingredients and cook it in a 10"x8" tin. It rises up to the very top, but doesn't spill over. (Obviously if you used the dates and stem ginger you couldn't do this). It obviously takes longer to cook, but I'm not sure exactly how long - maybe half an hour, I just tested it every 10 minutes after the hour.

    If you wrap it in greaseproof paper and leave it for a few days it gets even stickier - if your family can keep their mitts off it!
