Going vegan......old style?!

We have both been vegan for a combined 40+ years and every now and again, we like to see if we can make a vegan version of something we used to eat in our teens! We have made a list of things to experiment with!

Glad to see the thread going again. Today I thought I'd experiment with a scotch egg type recipe, but was wondering what to use for the egg. I thought of mushrooms, tofu or potatoes. Well I decided to go with a new potato as they needed using up and was the least messy.
So I peeled 4 potatoes and boiled them for a few minutes until just cooked. Whilst they were cooking I made up a pack of granose sausage mix. The asda mix would of worked just as well. I drained and rinsed in cold water the potatoes. I then divided the mix into 4 and rolled and flattened a piece in my hand and placed a potato in the middle and put the mixture round it. After doing this for all four, I rolled them in polenta.
I then sprayed a tray with olive oil and a quick spritz on the balls and placed them in the oven at 180degrees for 20 minutes. Well they was very nice, but the potatoe didn't have much flavour, so next time I are going to marinate and fry some tofu and use that at the centre.
My question to you all is, can you think of any other vegan filling for the middle, that would go well with the 'sausage meat' outer shell?

Maybe you could do something that resembles a picnic egg, you know the mini ones with egg mayonnaise in them? I was thinking along the lines of how I make my scrambled “egg” and “egg” mayonnaise for sarnies.
“egg” Mayonnaise
Mix together:
Extra firm tofu cut in to very small cubes (or sometimes I use cubed potatoes, cooked until soft but not too mushy)
Finely chopped onion ( I usually do approx a quarter of the amount of tofu or potato I use)
Egg free vegan mayonnaise ( I use a couple of tablespoons but you might want to use less when rolling in to balls for making scotch egg)
Mustard (add according to taste)
Pinch of paprika
Pinch of salt
Teaspoon of Haldi (tumeric) (approx. depending on the amount of ingredients used, it’s just for the yellow colour if too much goes in it goes orange)
Chopped chives (optional but I find they give a bit of extra taste)
Good spread on a salad sarnie and mabe vegan scotch eggs, let me know if you try it and it works.
Scrambled “egg”
Along the same lines of the egg mayonnaise:

Pinch of salt
Half teaspoon haldi (approx depending on the amount of ingredients used, it’s just for the yellow colour if too much goes in it goes orange)
Chopped chives (optional but I find they give a bit of extra taste)
Rice/soya milk (about a quarter cup full)
Corn flour to thicken
Fry the onions and the tofu/potatoes in some vegan margarine until golden add the milk, mustard, salt, paprika, haldi and chives, add the cornflour diluted in a small amount of water (so no lumps) and cook until a scamble egg like consistency.
Good with a fried breakfast or on muffins.
Edited to say: All this talk of scambled eggs has given me a craving but obviously I don't have hardly any of the ingredients...typical i've been off work all week ill so have had to make do with ingedients i've got, so I raided the freezer and found some hash browns I put them in a the milk stage of the scrambled egg recipe and they softened really well, added some lemon juice and parsley (no chives) and put them on a muffin with a few leaves of wilting baby spinach and voila...eggs florentine (sort of)

Thanks for the recipes. Hubbie doesn't like mayonaise, so unfortunately this won't work, as is. Never thought if using potatoes instead of tofu. Will have to give that a go. I will certainly try the recipes myself though.

Just a mum, thanks for the Iom info, do you have any vegan friendly restuarants there or am I expecting too much? our Tesco sells vegegel, if you wanted I could post you a box, just pm me no worries J I can’t get hold of no egg any more either our H&B has stopped selling it, although you can buy it from the vegan store website, they also do yummy looking marshmallows but they always seem to be out of stock when I go on there to look.
I did a stock shop of vegan goodies in waitrose and sainsbury, waitrose was very expensive and not very mse but I thought occassionaly you can treat yourself J and it will last me ages. All from the kosher section, I bought Aviv Halva Filled Cookies 1.99, Osem Bissli Onion hoops crisps .59, Osem Bissli Barbecue Flavour twisties crisps .41, Aviv Chocolate Chip Cookies 1.99 Schmerlings Praline Chocolate Bar 2.49 (this is wonderful and definitely vegan beware some of the kosher dairy free chocolate contains shellac (E904)) Osem Bamba Peanut Snack .20, Yarden Basil Pesto, 2.79
Has anyone tried Rakusens chocolate digestives and plain digestives? They are so good, it’s been a while since I tried “normal” digestives but I think they are just as yummy if not better, they are stored in the kosher section in Sainsbury’s I think waitrose do them too, they are about 85p.
Also from Sainsbury I bought safe to eat tomato soup (1.39) and a safe to eat korma sauce (1.69) the tomato soup is really nice and perfect for the cold winter months ahead, I love tomato soup but can’t understand why they all have milk in them even the ones that are not cream of tomato have some sort of skimmed milk in them (I know I know I should really make my own, I should really dig out my old recipe’s) I have not tried the korma sauce as I always make my own curry but thought I would buy it for a convenience meal one night, will let you know as soon as I have.All that glitters is not gold0 -

We don't eat out. But at the train station in Douglas there is Greens which is all vegetarian, but they do have some vegan options. Unfortunately they don't do any vegan puddings except for Swedish Glace ice-cream - and at £1 a scoop it's a bit pricey!
I found some no-egg recently in our local health food shop, so I'm fine for a while! Don't worry about the vege-gel, I'll ask my mum to buy some for me - she's coming over at half term.
When I was in the health food shop I bought some liquorice, and next to it were some packets of vegan chewy coke bottles, so I bought a packet thinking they would be roughly the same price as the liquorice. The liquorice was 99p a packet - and the coke bottles were £2.19!!!I love tomato soup but can’t understand why they all have milk in them even the ones that are not cream of tomato have some sort of skimmed milk in them
I only make my own tomato soup when the supermarket has bags of tomatoes they are selling off cheap. I have found a make of soup called Grannys, and their tomato soup doesn't have any dairy in it. It's not too bad either.0 -

Sadly no time to look through last couple of pages, but Sains is still doing 4 Heinz soups for £2 :money:, I picked up two vegetable and two lentil. I do tend to make my own, but I can get really lazy with it sometimes.
Rice Krispies 600g is £2, unfortunately I have to get the 'real thing' for OH so it's not as MSE as own brand but never mind!
My mind's not been on food too much this month - am suffering what the doctor has diagnosed as a very bad spell of IBS and so my appetite is not what it usually is and I'm just eating whatever comes to hand because I'm all grumpy about it :mad:. I did however try the tofu loaf (Hmm, didn't note who put it on!!!!!!) and I thought it was delicious :T
Not really any other MSE news I'm afraid - some help needed though! Am looking for a hair care product for heat protection (hair dryer/straighteners-type heat, sadly not sun). Anyone come across a vegan product? I was thinking Wella as somewhere I read it's vegan?
Also, has anyone found out whether 'value' cereal bars (Tesco and Sains Basics) are vegan? Good to have at hand - am sure the Value ones are but it would be good to know if anyone has contradictary evidence!0 -

Does anyone know of anything occurring for the aforementioned World Vegan Day on November 1st? Is anyone planning anything fun?
I'd like to do something but I've no clue what. Especially as it's Halloween the night before. I may try and do all-vegan catering for my Halloween party but other than that any ideas?
Also, if anyone happens to be in Cardiff and needing a vegan lunch/snack/excuse to eat then head to Hungry Planet in Splott. Went there a few days ago with my OH and we both had a totally vegan fry up! They also did soups, cakes(!) and sandwiches (and there is non-vegan food too). Yummmmmmmmmmmmm:T0 -
