Going vegan......old style?!

Glad to see the thread going again. Today I thought I'd experiment with a scotch egg type recipe, but was wondering what to use for the egg. I thought of mushrooms, tofu or potatoes. Well I decided to go with a new potato as they needed using up and was the least messy.
So I peeled 4 potatoes and boiled them for a few minutes until just cooked. Whilst they were cooking I made up a pack of granose sausage mix. The asda mix would of worked just as well. I drained and rinsed in cold water the potatoes. I then divided the mix into 4 and rolled and flattened a piece in my hand and placed a potato in the middle and put the mixture round it. After doing this for all four, I rolled them in polenta.
I then sprayed a tray with olive oil and a quick spritz on the balls and placed them in the oven at 180degrees for 20 minutes. Well they was very nice, but the potatoe didn't have much flavour, so next time I are going to marinate and fry some tofu and use that at the centre.
My question to you all is, can you think of any other vegan filling for the middle, that would go well with the 'sausage meat' outer shell?

On the scotch egg front, I can't think of anything different but I would imagine the marinating the tofu in all the flavourings used for scrambled tofu would make it quite pleasant. In fact maybe make up a batch of scrambled tofu and use it just for filling the eggs. I reckon my OH would love this idea - may try it out for his lunches.
My local shops all got rid of their non-vegan sosmix fairly sharpish so all my granose stuff is back to being edible. Luckily for me in the interlude my mum unearthed an ancient box of the real deal Sosmix from before the change so I used that. I'm sure it was way out of date but totally worked!:rotfl:0 -

Have you tried smoked tofu? I've never seen it outside of health food/vegan shops and it's a bit dear, but the flavour is amazing and well worth it. I bet it would go great in your recipe.0 -

I think the combination of the smoked tofu with the (rather revolting) flavour of the sosmix wouldn't really mix well0 -
Just a reminder of the Complete Vegetarian collection for those who only found the thread. I have marked specifically vegan recipes with an asterix. Will continue to update so please let me know of any recipes that come up here. I'm new to indexing and it's a work in progress so all feedback and suggestions welcome.

I think the combination of the smoked tofu with the (rather revolting) flavour of the sosmix wouldn't really mix well
In that case, I'm not sure there's much that would go with sosmix!
How about using the smoked tofu to make sosmix surprise?
Mix grated smoked tofu with caramelised shallots, garlic, thyme, lemon zest and juice, and chopped cashews. Put into greased ramekins and bake til firm.
Take the packed of sosmix and… chuck it in the bin?! :rotfl:0 -

Hi,
Thanks for the 'scotch egg' ideas. I shall have to see if I can find smoked tofu has hubbie likes the idea, although I don't like smoked food! We both like sosmix, but I realise its not for everyone. I will have a play eventually and see what combinations I can come up with (will give me something for my blog!). My hubbie wanted a scotch egg alternative and thought the outside was brilliant, but didn't care for the potato centre! We have both been vegan for a combined 40+ years and every now and again, we like to see if we can make a vegan version of something we used to eat in our teens! We have made a list of things to experiment with!
