Hi, Joyful25, that was me - so glad you liked it! I make it regularly :j

  • Hi,
I am not a vegan per say, but I am on the way to start using up every thing in the house,
I am intolerant to both dairy and eggs so that is a good help.
I have every bean/lentil/pulse in the house and in big bags as well. the idea being that it hardly ever goes off, but it really does need using and now is the perfect time to get started.
But need lots of help as I am really not sure what one does with 5kilo's of pigeon peas?
I made a Moroccan chick pea and coconut stew thing yesterday that I found the recipe for that was very good, and I will have that again. but its not the type of thing I would want to eat more than perhaps once a month.
I have read a lot of the cooking ideas so far and will be on the look out for more over the coming months (yes there is LOADS of the stuff, I like to buy in bulk as I do not have transport)

Ooooh, would you be able to post the chickpea and coconut stew please? It sounds divine (I'm a big fan of both major ingredients and a wannabe vegan....) x

Yes this is so easy it is unbelievable!
It is supposed to be half a tin of chick peas and half black eyed beans,
but you can use any, and I always used dried. (make up a bunch and freeze.
I have to warn you I do not measure so this is very trial by error thing.

about a cup of peas/beans per adult serving.
    an onion,
can of coconut milk, or coconut milk powder made up to i/2 cup per amount of beans.
some cinnamon, cumin, perhaps some curry powder.
add it all together, and simmer till all the liquid is absorbed.
That's it!! So easy and it is really filling as well

Murrell, what about mixing the tofu/potatoes with a mustard or horseradish sauce?
    .

    Hi
Thanks for suggestions. Just collecting ideas at present, been busy cooking other things. Want to make a special birthday meal for me and my guests next month. Hoping to do a black forest gateau for dessert!

Also, has anyone found out whether 'value' cereal bars (Tesco and Sains Basics) are vegan? Good to have at hand - am sure the Value ones are but it would be good to know if anyone has contradictary evidence!

I don't' think the sainsburys ones are vegan if its the ones i looked at as they have vitamin D added (they usually use the 'from lanolin' vitamin D as they do in there cereals!) I haven't seen the tesco ones, as only have a tesco express local.

    thanks

  • Hello all,

Does anyone know of anything occurring for the aforementioned World Vegan Day on November 1st? Is anyone planning anything fun?

I'd like to do something but I've no clue what. Especially as it's Halloween the night before. I may try and do all-vegan catering for my Halloween party but other than that any ideas?

    How about a pumpkin theme?
Pumpkin soup to start, pumpkin risotto for main dish, or curry, lasagna, the poosibities are endless. and good old vegan pumpkin pie for dessert?

  • I like the idea of completely pumpkin themed food. Maybe it shall be done.

Also, does anyone know, or can think of, some ideas for using up a huge packet of miso? I cannot remember why I bought it:o and though I like miso soup there's only so many times I can eat it. I'm sure it can be used in sauces or something but I really don't know. Thanks. :D
  • Think I read somewhere that you can mix a little with oil and vinegar for a salad dressing
