Well I'm off to try and finish Twilight - anyone on here succomb to the hype?? although it's a bit of a teen read, it's pretty gripping - not usually into vampire stuff but it's pretty addictive xx

I haven't succumbed to the hype - yet!!! My DD1 loves them, and has just shown me in the Book People brochure a set of the first 3 for £9.99 - we picked up the 4th when we were in South Africa as she was desperate for something to read. So I'm going to order them (I might give them a go - I've read all the Harry Potter ones!)

I was thinking about this thread today myself (great minds and all that :rotfl:)

I thought you might (or might not ) be interested in what I made yesterday. My DD1 wanted me to make toad in the hole. I've got a couple of vegan recipes for it, but they do tend to be a bit on the heavy side. So I decided to adapt the scotch pancakes recipe from the parsleysoup website.

    8oz sr flour
    2 tsp salt
couple of tsp dried herbs (if you want to put them in)
    350ml soya milk
vegan sausages (I like the Redwoods ones)

Mix the dry ingredients together, then whisk in the soya milk.

I made it in individual dishes, which fitted one chopped sausage each. I put the chopped up sausage and a bit of Pure soya spread in the tins then put them in the hot (about 220C) oven to heat up, then I poured on the batter (about half filled the tins). I had some left over, so I made some individual yorkies in muffin tins. Then I put them in the oven and cooked them for about 20 minutes. They were much lighter than other vegan toad in the hole batters I've had. It made 5 individual ones and 5 spare yorkshire pudding type things (of course they don't rise the same as proper yorkies). They were very tasty anyway.

    Hi,

Must try this one sometime. The scotch pancake recipe is my favourite pancake recipe. I have had many failings over the years and have vowed not to try new ones, now I have found this one that works! So will try this toad in the hole recipe.

    thanks
    Sandra
  • I've just leaflets in Mr S saying now's the time to make your Christmas cake so you can a good few months to 'feed' it with brandy before the big day.

Anyone have any experiences/recipes for vegan Christmas cake?

Oh and I thought I would add something as I noticed a few people mentioning the new Pure dairy free cheeses. Don't buy the soft cheese version...it is totally VILE. It is sweet beyond belief (in a very artifical tasting way) and possible the most disgusting food I have ever eaten. Stay away!

I am not one for throwing food away but after a tiny taste both me and the boy decided it had to go. For a start I think it would have put him in a diabetic coma....
I have to agree! We hate waste but I threw ours out too. That said, some people may like it so I'd still probably give it a go if you haven't tried it.
Tofutti Vegan Cream Cheese - Garlic & Herbs is the best for us. Or the plain one if making cheesecake. Mmm.

Welcome back to veganism, fayhare. :T

My omni partner loves the garlic and herb one. Whenever I used to buy it I never got a lot of it (read about enough for two sandwiches ) as he would eat it all really quick. He even likes it more than philadelphia garlic and herb . When I used to make uncheese cakes I used silken tofu to make the base, it was real easy.

Following recipe is taken from "Easy Vegan cooking by Leah Leneman" - page 187.

Tofu Cheesecake 2 - (what I call the Uncheese cake :D)
    • 55g vegan margarine
    • 170g vegan digestive biscuits
    • 455g tofu
    • 3 tbs tahini
    • 115g plus 2 tbs of sugar
    • 4 tsp lemon juice
    • pinch of salt
    • 1 and 1/2 of vanilla essence
    • 285ml of plain soya yogurt
    • 1/4 tsp cinnamon
    1. Melt the margarine, crush the biscuits and mix them with the melted margarine. Place the mixture in a pie dish and form into a crust.
    2. Puree the tofu then mix with tahini, 115g of sugar, the lemon juice, salt and half of the vanilla essence.
    3. Pour the mixture into the 'shell' and bake in the oven at 350F/180C/gas mark 4 for about 30 minutes. Remove from the oven.
    4. Mix the yogurt, remaining sugar and the cinnamon together. Spoon this mixture on top of the 'cheesecake', and bake at 425F/220C/gas mark 7 for 5 minutes. Allow to cool, then chill thoroughly until ready to serve.

  • Hi all, Yay lots of activity on the thread, is eveyone looking at other threads? am I missing out on something? there is so much on here, I never know what to read.
Thanks justamum for the yorkie pud recipe, I love them but haven't tried to make them since being vegan, do you think there would be any way to make them rise? maybe using noegg or yeast or something? could you also give me some advice, I will be a "come over" to the "rock" soon (just for a quick visit though :)) and I wonder where will be the best place to shop for vegan goodies, is shoprite ok or will I be better off with Tesco?
I am v. dissapointed on hearing the news that the pure cream cheese is rubbish, I have two tubs of it sitting in the fridge, would there be a way of using it up? maybe as a frosting for carrot cake? what does everyone think of the slices? I have not been able to source any yet but dying to try them.

:T I LOVE that! UN-cheesecake! I am so calling it this from now on! We had vegan cheesecake (now called uncheesecake) at our vegan wedding - I wish I'd've heard of this name then!

You may well be able to use them in a frosting, or for making 'uncheesecake' - I didn't throw mine away for a while in case I got around to making an uncheesecake, but the packet had been open too long so it had to go. But yeah, worth a try.

I haven't found the slices yet.

I don't know where I picked up the term. It might have been after I found out about the uncheese book! I haven't bought it but thought it was an amazing idea as I never liked cheeses all that much when I was omni/veggie. However I'm sure it was a used term before that .

The plain pure 'cream cheese' probably would work in an uncheesecake in the way people make the dairy kind. I'd say try it Zahava before you make your mind up though as it is different from person to person. I personally didn't like it all that much either but you may at the end of the day. As for the Pure 'cheese slices' I bought them from ASDA but haven't tried them yet as I don't eat a lot of processed foods (they are treats like they should be :)). It does depend on what your ASDA or any other shop stocks though. It's like the ASDA near me used to sell Redwood products but don't anymore but the one near my sister (about 10 miles away, around where I used to live ) still sells them. Although I don't eat such products often it is still nice to know where I can buy them from for things like a treat pizza/picnics/long days out etc.

Shoprite does have some vegan food - Alpro stuff mainly, but also the White Wave soya milk which is the only one I buy (so don't go buying up my stock!!!!! :rotfl:) Tesco has some in their "free from" area of the shop, and there's also Holland and Barrett. There is a health food shop in Douglas (I'm not sure how familiar you are with Douglas) and one in Port Erin too.
