I am thinking of adding to my food stocks things that can be frozen and just microwaved, or any canned vegan foods that would be suitable in case we contract swine flu. Something that would be fancied if you feel grotty and wouldn`t take long to get ready.
I am not trying to advocate panic buying, and I usually, like most mums, have bottled water, lemons, painkillers etc in stock. I was thinking of making ratatouille, tomato soup, pasta in sauce, making bread rolls and freezing all these in individual portions. Does couscous freeze well?
Can anyone else think of suitable things that are canned or can be frozen? any ideas would be gratefully received.The more I see of men, the more I love dogs - Madame de Sevigne0 -
Not sure about freezing couscous but it is very quick to use. I wishi had enough freezer sapce to do much planning ahead! I do have a fruit tray bake in there - cut into slices and also pizza - I use it for school packed lunches but could benuked very quickly.
My current dilemma - my IL's are from Tuesday to Sunday - they are very traditional meat and two veg eaters - my FIL won't eat curry anything. I will be doing the vast majority of the catering - what are good meals to serve to non-vegans?
Also just bought some white bread flour from Sainsburies - when i got home i found out its not suitable for vegans or milk allergy sufferes due to production methods! FLOUR! - !!!!!!?Claire

Thanks Betty, couscous is quick, I am trying to keep effort required to an absolute minimum, also not to have all stock frozen in case of power cuts. I think some Redwood products will help with that.
Sorry to hear about the probs with the flour, never seen that before. As to the dilemma with the in-laws I am sure someone on here will be able to help you, not had much experience with cooking for visitors since becoming vegan. A shame they won`t eat curry, ratatouille is a very hearty dish might they eat that with a good selection of roast vegetables?

Exploding oat milk?? How bizarre, I've never had it explode on me! I only ever drink vegan "milk" in milkshakes or use it as an ingredient- but then I never did like to drink cows' milk by itself anyway.
If you're after quick cous cous, Morrisons make wee snack pots that you just add boiling water to and the Morrocan-style or Mushroom ones are vegan. I think they're about 59p or 69p. Sainsbury's also make own-brand value pot noodles and supernoodles, and some of them are vegan(they clearly mark them as suitable for vegans too which is handy!) Not the healthiest thing in the world maybe but a handy standby to have in the cupboard nonetheless.
Also, blue dragon make tinned oriental mixed veg and some of their cooking sauces are vegan. Most supermarkets sell tinned vegan curries and chillis(try the ethnic aisle as well as the tin aisle), flavoured beans and even ratatouilles for handy standby foods. Granny's brand potato and leek soup is vegan. Many of the Ten Calorie Soups are vegan if you're after a cup-a-soup. HTH
betty1- ratatouille is a good suggestion, other things I'd feed them might be a nice soup with crusty bread, pasta with a tomato-based sauce, or a risotto.Owing to financial constraints, the light at the end of the tunnel has been switched off until further notice.

Aah, the thread that feels like coming home!
Hey guys, some great posts in the last few weeks - a couple of users really stand out in my mind and it's really great to have you on here! Will be 'quoting' asap.
I feel like I'm eating quite unhealthily at the moment - it always dawns on me when I read this forum! :eek: However, have got back into making MS portions of food, and the week before last I made four meals which the OH ate and enjoyed!
On Friday, friend came over for dinner and I made some enchilladas - I do it with TVP, a can of chilli sauce, sweetcorn and tom puree with pepper.
Added to that, my OH's issue with swine flu continues apace, and am really trying to go all out this week to boost our immunity; plan to make 2 x veggie curry, stir fries with plenty of peppers and some smoothies.
My prob is that I find orange juice doesn't agree with me; OH has a carton every day and I actually find myself envious. Has anyone else found they have a prob with OJ, and can recommend a less problematic but equally rewarding juice?
Have just done food shopping but must take heed from twinkle_star about ground almonds; they'll be on the list for next week.
In fact, that gives me an idea. I find the daily menus helpful.....would anyone be prepared to swap shopping lists? That would also give me great inspiration, especially in terms of MS :money:.0 -

I will face the same dilemma later this year when my FIL will return from their summer home (tsk) and expect us to put on a dinner or two. However, I'm lucky in that they love a veggie curry or two.
What I would suggest is something which isn't too radical (I hate even writing that as every vegan wants to show people what they're missing, but hopefully you see where I'm coming from) and the fantastic recipes on this thread will help:
- lasagne using soya mince and Cheezely to substitute
- making and baking individual cheese and onion pasties with veggies
- shepherds pie
- pasta bake
Then I suggest they take you out for a meal on at least one of the nights, to thank you for your hospitality! :kisses:0 -
Day 4 of being vegan and I think I've fallen off the wagon a little. Not that I've not stuck to the diet, just that I keep eating junk food!
Breakfast- Crackerbeard x 5
- Pure spread
- Toasted muffin x 2
- Pure spread
- Marmite
- Low fat crisps x 2
- two more packets of crisps!
Does anyone know any good vegan sandwich fillings? This seems to be my downfall!

I am loving Asda atm, I found loads of redwoods vegi deli products: brussels style pate, fishless fingers, peperoni slices and some bacon rashers, they also did chicken, beef and ham slices too and also for those of you that enjoy a good curry they do Taj Mahal vegetable ghee, in fact the only thing I was dissapointed with is that they didn't do the Pure cheese slices which was the only thing I went in there for, came out happy though. Did you all know that Pringles BBQ, paprika and zesty lime are all vegan?All that glitters is not gold0

Did anyone see Heather Mills on This Morning last week? She was cooking a couple of Vegan dishes, they looked quite tasty, even Philip ( an ardent meat eater apparently) thought the dish he tasted was lovely.
