  • Hi, today I've got some pasta for lunch with bacon, mushrooms and parmesan, made with Jamie Oliver's tomato and chilli sauce which was on offer, and I'm enjoying it loads it's lovely!

    I keep cup-a-soups in my desk too Mrs Porridge, I find they jazz up a boring cheese sarnie quite nicely :)

    It's date night tonight so out for tea, and it's on me as OH has been bank fraudified, but my concern is mainly my packed lunches anyway so I'm not bothered.

    Hi All

    Haven't posted for a few days as I've been off work cos of the weather and just been grabbing bits and pieces.

    However today I had 2 delicious hard boiled duck eggs (free cos they're from my Mom's ducks) with homemade bread (also free cos its actually Mom-made and she gave me half a loaf yesterday). I love homemade bread but don't have a breadmaker myself. Very tasty free lunch.

    Lunch today was leftover pasta bake from the other night - zapped it in the microwave at work for 90 seconds and it was yummy! :D

    Dinner is being concocted by Mr P as I type... Rice currently being cooked with saffron/stock/spices, plus all the "hanging around in the fridge and could do with being used up" veg (a green pepper, 2 courgettes, 4 tomatoes and a red onion) roasted off, a small piece of broccoli that is looking slightly limp being steamed, and some chicken and some bacon, both of which are leftovers from previous meals which were shoved into the freezer. All the ingredients will be mixed together and we will see what we end up with - sounds a bit random, but it is smelling absolutely delicious. :p

    And on the plus side, he is making enough for 4 portions, so as there are only the two of us this evening, we will be eating the remainder for lunch tomorrow... ;)

    Did a batch of tuna pasta salad last night, had some today & will do for the rest of the week, and its my fave... yum yum!

    wholewheat pasta (40p)
    3 chopped peppers ('smartprice' so 60p)
    2 sticks of leftover celery (15p ish)
    2 cans of tuna (£1.20)
    half a cup frozen sweetcorn ('smartprice' again 15p)
    2 spoons mayo (a moment on the lips a lifetime on the hips! 10p)
    100g leftover chedder (40p)
    1/2 leftover onion (15p)
    sprinkle of dried chilli flakes (my addiction!!)

    so £3.15 for 4 lunches and extra healthy to boot!!!

  • Just realised how giddy this thread has made me... I love cheap lunches!!

    The food in the canteen at work has crazy prices (75p for a mullerrice!!), and the meals are generally fruit and veg free!

    Think I'll do spicy carrot and butterbean soup for lunches next week...

    6 large carrots chopped
    2 chopped onion (fried in a little olive oil)
    2 veg stock cubes
    lemon juice
    corriander
    mixed herbs
    salt & pepper
    1/2 a red chilli
    2 cans drained butterbeans

    cover in water, boil then simmer for 45 mins, blend and bobs yer uncle!x

    Piglet that random meal sounds beautiful, hope you enjoyed it! Boring old cheese sarnies for me today, with a cup-a-soup from my drawer. Same again tomorrow I think.

    Lunch today is likely to be a sandwich (wholemeal bread) with either Spam or cheese. Dinner will be a cornish pasty (cost £1.20 at farmers market yesterday). I know it was expensive but it has been made with free range organic beef and organic veg from the farm - all homemade by the farm too. I shall use up some tired veg from the fridge and even a couple of aunt bessies roasties.

    Will finish off with fruit.
