Cauliflower cheese does not freeze well, its easier to keep it in the fridge and keep snacking on it (its always better the day after especially after a few beers!). Flour does go off either bin it or give it your local tombola for a prize. Good recipe:- I buy all the ingredients from Lidl on their half price day
Chop 1 onion and half a cabbage (green) finely
fry gently in olive oil until transparent not brown (onion not cabbage)
Cut up cauli into sections and boil until almost soft.
Heat half pint on milk to almost boiling add 8ozs strong cheese and large shake of chilli sauce or worcester sauce. Slake a teaspoonful of cornflour (that is mix with a bit of cold water in a cup) slowly add to milk cheese mixture until you get the right thickness. bring to boil and then remove from heat.
Drain cauli and give a light shake put into oven proof dish.
Add onion/cabbage to cheese sauce, check seasoning (salt and pepper) pour over cauli. Top with grated cheese and put under grill until brown and bubbling and scrummy. EAT!!0 -
