I've loads of fish pie mix in my freezer and need to find a lovely recipe!!

I don't have a recipe as such (and I'm not elderly) but I do occasionally make fish pie. I tend to just slowly cook some finely chopped shallots in butter, then when they're soft add some white wine. I bubble that off, then add some flour and cook that out. Then I slowly add some full-fat milk and fish stock to make a white sauce, then add a dash of single cream - it needs to be thick-ish as it tends to loosen off when you bake it because of the fish juices. Then I add the fish (usually salmon, some white fish and prawns), some (frozen) peas and some chopped fresh parsley, and seasoning.
I top this with some mash (lots of butter and some more cream) and some cheese, and bake it until it's crispy and golden. We don't have this often as it's not really good for you, but it is delicious!0 -

Poach your fish (whatever you fancy, but adding some smoked fish gives a lovely flavour. I don't like prawns in it) gently in milk.
Drain, and reserve the milk. Make a white sauce with a roux and use the reserved milk to make the roux into a sauce.
Put fish into an oven-safe dish, add in peas/sweetcorn/carrots, pour over the white sauce.
Use a nice, fluffy potato such as a King Edward and mash with lots of butter, salt and pepper. Top the cooled fish and sauce mix with the mash and cover with mounds of cheese. Stick it in at around 180 till bubbling and done.
