    I'd make up a big spanish omelette. Big pan, fry sliced onions, par-boil sliced potatoes and chuck those in to fry, add any other random veggies you have - and cheese if you want - whisk up your eggs (with mixed herbs if you want), chuck the eggs over the pan contents. Cook until the bottom's done, then either flip it over or shove the pan under the grill.

    Lovely hot or cold - it sets quite firmly. Ideal cold for picnics too.

    We get through loads here too. At the moment I'm on an ice cream kick so I'd use the yolks for ice cream with some summer fruit and the whites I'd either freeze or turn into meringues.
    As Stephen said you could hard boil them, I'd make salad Nicoise with them;
    (or Kedgeree).
    Also partial to scrambled egg with smoked salmon.

    You could always hard boil and then pickle them.

    Right, I have four chickens bless em and eggs coming out of my ears!!! we are on a very tight food budget the next couple of months but I could desperately do with some advice on different main meals I can make using eggs. So far I have come up with:

    Omelette and variations (fritata's)
    HM Scotch eggs
    HM quiche

    that's it!!!

    any others?

  • How about selling some. You could put a sign outside your house. People will pay a fair amount for free range eggs. Then you can buy something else to eat for a change.
