    Mayonnaise for the yolks.

Eggs can be used past their date. If that is your concern.

You can make pancakes. Yorkshire puddings for freezing till you need them. Cakes. Scotch eggs.

How long do fresh meringues keep for and what else do you need (what type of sugar etc)?

You can use either white sugar or brown/raw cane sugar. Brown giving them a slightly browner colour and grittier texture. ( Not the best word but you know what I mean. Grainier might be a better word.)

If it was me - and i dont have a sweet tooth, then i would make egg sandwiches for HM packed lunches and make an omlette or HM quiche for tea - that or some kind of HM baking will use up your eggs sharpish

Meringues store really well. Put them in an airtight container and they'll last in the cupboard for weeks if not months.

Consider first this, your eggs are not going to become toxic the day after the use-by date. They will almost certainly fine for cakes and biscuits.

You could always hard boil and then pickle them. They'll keep for ages then.
