  • Don;t beat all the icing sugar or sift it, if you have a food processor, whizz the icing sugar for a couple of seconds, put in the butter and flavourings and whizz again, if too thick add a bit of boiling water and whizz again, done, butter icing in seconds!

    Bake for 45-50 mins until golden and springy to the touch. Leave to cool for 10 mins, then turn out of tin and remove paper. Cut into bars or squares.

    Just to say that I've tried this traybake and it's really good. It's my third attempt at making apple cake (I have a load of windfall apples to use up), and definitely the best one. In fact I'm just off to eat a slice now! :)

  • Does anybody have a basic traybake recipe giving measurements in cups? My scales have broken and I've ordered some more off amazon, but they haven't arrived yet.

    my apologies for not getting on here as much as i should (been hetic recently)

    today i invested in 2 9x9 silicon baking pans from wollies for £4.00 each, im hoping i can use them to make some sort of traybake (or have i got wrong trays here?)

    i make the boys small buns and biscuits but havent ventured into anything more with them, they are starting to nag me more each time we go shopping for cakes etc that are wrapped look great but full of who knows what

    i need to try harder this year im slipping

    Mary Berry's Easy Cakes has some good cake recipes in it.

    I find that 6oz sr flour, 6oz caster sugar, 6oz marg and 3 eggs will do one of my tray bakes.

    You can flavour them with all sorts of things. Sometimes I add lemon rind to the cake and then top with lemon icing. You can use cocoa and chocolate drops with chocolate icing. I sometimes use some brown sugar and ginger powder and top with an icing with chopped stem ginger using ginger syrup instead of water.

  • just to warn you i bought the silicon woolies baking pans and even after i followed the instructions to grease before you use them every time i've made cakes they've stuck to the bottom. dont mean to be out a downer just letting you know
    Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts :heart:
