That would do it but don't forget with silicone that you have to wait until the cake is cool before removing or it will stick. Once mine has cooled I can turn it out easy peasy.MAY GROCERY CHALLENGE £0/ £250

well in the end yesterday i made a simple one of a basic sponge mix covered with glace icing and sprinkles (nothing fancy at all)
its all but gone, my boys have kept on..and on..and on so it lookes like something as simple as that is just what they want
october gone joels birthday cake wasnt much different (2 layers with a cream type filling inside cake was from waitrose cake costing 30) he ate none of it!, i havent costed yesterdays but im guessing it couldnt have been more that £1 to make

You can make a batch of 12 muffins in a traybake tin.
I make muffins for my school's healthy tuckshop. I've been asked to make them smaller as the reception children weren't managing to finish a whole muffin (what a waste!).
My first thought was to make mini muffins, but that either means hunting down the mini muffin paper cases, or greasing each cup and then having to wash the tin afterwards :rolleyes: Also they're quite fiddly to fill. So I hit on the traybake method. I can get 24 smallish squares out of 12 muffin mix. I think I'll try for 30 though and make them slightly smaller.

Here's a traybake that always goes down very well and doesn't need any fancy ingredients. Value brands are great for this. It's another Mary Berry one from an ancient, yellowing copy of 'Family Circle'!.
Today's Rock Cakes
8oz 225g SR flour
4oz 100g soft marge
2oz 50g gran sugar
4oz 100g dried fruit - anything you like
1 egg
1tbs milk
good pinch salt
1oz 25g demerara sugar (gran will do) for topping
11" x 7" traybake tin. (I line it roughly with baking parchment)
Gas 6, 400F, 200C- Rub fat into flour & salt
- Stir in sugar & fruit
- Stir in egg & milk to make a stiff dough
- Roll out roughly to size on a floured surface & press into the tin
- Cut out about 16 bars
- Sprinkle dem sugar on top & press in
