i make up a 12oz cake mix and make a tray bake with that.

Stupid question coming up. Is that 12oz total weight of ingredients, or the weight of the flour (like in a pastry recipe where, say, 10oz pastry means 10oz flour iyswim!)

Just a quick one, I have a Prestige cake tin that is 32cm x 18cm x 3cm (12.5" x 7" x 1 1/4"). I want to make a few traybakes today but I am not sure if I use this tin, will the batter spill over when it rises? Should I leave a spoon or two out when I fill it (I hate wasting it!)

You can make a batch of 12 muffins in a traybake tin.

I make muffins for my school's healthy tuckshop. I've been asked to make them smaller as the reception children weren't managing to finish a whole muffin (what a waste!).

My first thought was to make mini muffins, but that either means hunting down the mini muffin paper cases, or greasing each cup and then having to wash the tin afterwards  Also they're quite fiddly to fill. So I hit on the traybake method. I can get 24 smallish squares out of 12 muffin mix. I think I'll try for 30 though and make them slightly smaller.

    I call them muffin squares.

Hi thrifty, can I ask what muffin recipe you use for this? Would they need to be cook for longer than in individual cases? Thanks.

This one is always a winner in our house and last time I made it we had requests from oh's work mates for me to make more!!

    Malteaser Tray Bake
    100g butter
    200g milk chocolate
    3 tablesp golden syrup
    225g finely crushed digestive biscuits
    225g maltesers
Melt together the butter, chocolate and syrup then add the crushed biscuits and the maltesers. Mix together quickly then pour into a lined swiss roll tin and chill til set. For a special occasion drizzle with some melted white chocolate.[/font]
    Yummy!

Hi Blitz -sorry for the long wait, I've only just noticed your question.

    My basic muffin recipe is this;

    Mix together
2 cups (9oz) of plain flour
    1 tbsp baking powder
    ½ tsp salt
    ½ cup (3-4oz) sugar

    In another bowl mix
    ½ pint of milk
⅓ cup(3 fl oz) of melted butter or sunflower oil

Combine the two mixtures, add whatever flavourings/additions you want. Pour into tin and bake for 25 mins at 200c.

I don't use egg in my muffins, but if you want to decrease the milk to 8 fl oz and add a beaten egg to the liquid mixture.

sorry about the big writing -it will not shrink to the correct size:confused:

That sounds lovely Thriftlady, do you think it would work with soya milk instead of normal milk? I could make it dairy free then which would be great for us.

I'm sure it would. I've made a dairy-free version using a mixture of fruit juice and water in place of milk;)

Sorry if this has been mentioned before but I haven't gone through all of the posts but they have non stick baking trays in Poundland.

    :)

Saw them when I got my bread tin the other week.

Does anyone know if traybake recipes would work OK in a 9 inch springform tin? I bought one and don't know what to make in it other than cheesecake/torte type things so any help is definately welcome :)
