    YOGHURT FRITTERS

    INGREDIENTS

    * 1 cup yoghurt
    * 2 cups flour
    * 3 eggs
    * 1,5 tspn soda powder
    * Juice of half lemon
    * Oil for frying

    METHOD

    Beat the eggs. Mix with the rest of the ingredients and knead the dough well. Shape the dough into small balls and fry in plenty of oil.

    You could serve them with the tinned fruit.

    Doing sunday lunch today, oh and I could quite happily give pudding a miss but the kids love it and I have to confess that I could count on one hand the number of times I have made a pudding from scratch.

    I have

    Eggs
    Flour
    sugar
    butter
    Golden Syrup
    jam
    bananas
    apples

    probably some other bits and pieces in the cupboards. I know it screams sponge pudding but I do not have a bowl that I could steam it with, I do have small plastic mixing bowls though :)

    You have to borrow a steaming bowl from a neighbour!!! The treacle sponge pudding is just crying out to be made.....:D

    Sponge puddings come out really well cooked in a microwave in a Pyrex dish.

    I now have to admit that it's a while since I did it (daughters left home) but it would be worth a look in a microwave cookery book for timings.....sorry I don't have time to google for you at the moment.
